You're absolutely right Sebastian! I've been using the two different cassettes for a year now (on different wheels) and I don't notice a difference shifting. Because they're on different wheels, there's a more significant weight difference in the rims and tire choices.
Weird that when you weighed the used HG81, it came to 369g which is EXACTLY the weight that Shimano reports on their website for the 11-36T, but when you weighed the new one, it was 364.9. So how is it lighter than the older one, which should even have some material missing from usage? Strange.
I think there's definitely a range of manufacture tolerances. For example, I had 4 pairs of GP4000sii tires and none of the weighed exactly the same. Some had slightly more or slightly less rubber. They all performed excellent. But yes, it is strange. Thanks
I use the XT on my ebike. I love the fact that I can buy the sprockets separately and they are cheap too. I ride about 60-70 miles a day so chomp through them.
Maybe, are you using a double crankset or 1x up front? There could be complications with both. You may also need something like a wolftooth goatlink to extend it.

That lockring weight difference has to be intentional to make it seem like the xt is even lighter than slx
