I have watched thousands of TH-cam videos filmed in Japan from various channels. I am surprised that when it comes to eating at tables, both at home or restaurants or cafés, we see so many pretty plates, bowls, chopsticks and cutlery but we never see napkins, be them paper or tissue. Why don't the Japanese use them? Don't they get their lips dirty at times while eating?
I just purchased daikon at International grocery here in USA. We ate it raw in lettuce salad. Delicious!! Much better than the usual red radishes. Thank you for widening my horizons. Will be trying lotus this weekend.
That oven cooking Cookbook looks very interesting. Cooking with the oven is so easy. And takes less time standing in the kitchen. Your kimchi looks great, I've only made quick kimchi that only takes a couple of hours. But my husband loves kimchi so I really should try making it some time. What a great idea, renkon kimchi!
You’re very blessed to have those grocery prices - here in the States there is a shortage of eggs due to many chickens getting sick so the government has had to euthanize thousands - $1.80 for 1 dozen eggs you’re blessed - 10 plus dollars here for one dozen in certain parts of California - I went to my regular grocery store and purchased 12 1/2 dozen for $115.00! Prices are terrible but we are blessed because we are blessed to live another day❤

I cant do that. That much salt is bad for me and ppl with high cholesterol. Idk if a substitute would work for softening though. I do love watching though. Especially the shopping. Idk why but its calming. I love learning new recipies too. It'd be cool to trade recipes.bif you want any us southern dishes to try, I can type one up
Ooo I'm in NY and would love some southern recipes. Also, keep in mind you are not eating all of that in a day. A jar of kimchi lasts me about a month. Moderation is the key. When I started eating it I lost weight without trying, yay, and my cholesterol went down. Still not perfect but better.
In that case perhaps you can wash the veggies after they softened but I am not sure if the taste would be enough. Capsaicin in the chili flakes help to boost metabolism and thus lead to a natural weight lose, I suppose 🤔

Thank you for your video I enjoyed it very much. Just a couple of questions, do you rinse the cabbage etc with water to make it less salty before you add the kimchi paste and how do you stop the red paste for staining your plastic storage containers? Best wishes from Northern Ireland.
Hope i could be a bit of help... It's hard to get the kitchen paste stain off the container. That's why brick colored containers are made for kitchen container in kimchi refrigerator. Try to dark color ones and keep on using that one container cause of the smell as well. One other tip. You might wanna use glass container instead of plastic one-much better this way-and when washing, use baking soda and dish soap. Helps in every way. Hope this helps!
Also, you we DO wash the cabbage! (and use the salt and let it rest a bit) To make kimchi, we use salted cabbage. That's the way we do it normally(when we do kim-jang), and it takes time to have well ferment kimch(and we don't cut it into small pieces). But there's other ways as well. When u make a little everyday, you can make it like Linna-this way itt's more fresh kimchi than fermented.

Hello Linna. How long does the different kimchi last in the refrigerator? I would like to make it but do not know if it has to be eaten quickly, in a week or a few weeks. Thanks
To be fair a lot of countries I notice seem to have basket size or smaller shopping carts. I believe a mixture of smaller fridges and old tradition of shopping every day or other day conditions them to shop. Where as US we have bigger fridges and can shop in place in the fridge. Her fridge looks large compared to what I have seen in Japan on videos or sites.

Here in NY an 18 pack of eggs is only $4.00. Still high but I think it's because you are in California. Wildfires cause shortages. Supply and demand.

No, the recipe I follow do not rinse the salted veggies, just drain😊

They are light ferment according to my recipe book. They last for two weeks of time 😊
