Canning Chow-Chow and Freezing Bell Peppers

  • There is soooooo many veggies still in the garden and we are due for first frost in about a month. What to do??? Make chow-chow.
    I actually had 25 cups of chopped cabbage, 20 cups of chopped green tomatoes, 10 cups of chopped onions and 10 cups of chopped bell peppers.
    I used 7.5 cups of vinegar, 5 cups of sugar, and took all the spices for the recipe and times them by 1.5.
    I ended up with 16 pints of chow-chow!!! We will have some happy eating this winter and I may have a few jars to give for Christmas presents.
