Well that question is very simple to answer you see: The demon back can be acquired by specific training and as for Pickle he became a muscle freak by defeating dinosaurs etc. So it's normal that he doesn't have a demon back. But that stance when he did while fighting Baki made sense that he is actually a part of Hanma bloodline.
