Simple Summer Saison - Back Yard Brewing - All Grain BIAB Using Propane

  • Summer is here!!!! And in my opinion one of the best styles of beer to brew in the summer is a Saison. For this brew I switched things up and took my kettle outside to the backyard, because...well, why not? That's one of the great things about using brew in a bag and propane; I can brew pretty much wherever I can carry my equipment. And since I was going to be brewing outside I thought what better style to brew than a farmhouse ale, Saison. I'd like to think that when this style originated, they were being brewed outside in a barn or something anyway.
    I used WLP565 Belgian Saison Yeast for the first time and was not sure how well it would ferment. Brewfather was estimating a final gravity of 1.011 and I had found mixed reviews about this yeast on the internet. Well, I was pleasantly surprised at how well this yeast finished out and look forward to fermenting with it again.

    Recipe for a 4 gallon batch:
    6.69 gallons RO water
    Ca2 - 97ppm
    Mg - 16ppm
    Na - 8ppm
    Cl - 25ppm
    SO4 - 263ppm
    HCO - 16ppm
    I added 1.1g Calcium Chloride, 4g Epsom Salt, and 9.1g Gypsum to my mash water.
    Fermentables:
    6lbs Pilsner Malt
    1lb Rimrock Rye
    8oz White Wheat
    5oz Caravienne
    5oz D-45 Candi Syrup @15 minutes left in boil
    Hops:
    .4 oz Magnum @45min
    1 oz Fuggles @10min
    .5 oz Hallertau Blanc @0min
    Yeast:
    I made a 1.2 liter starter with WLP565 and fermented at 75-80F until FG was reached.
    Misc:
    1 Whirlfloc tab @15 min
    .5 tsp yeast nutrient @ 15min
    I mashed at 148F for about 45 minutes and only did a 45 minute boil as well. Adjust as necessary for your system and needs.

    Took a break from brewing for a few years. Wanted to get back into it, and only did once I could afford kegs and a proper set up for it. Bottling was such a pain.

      I live in Phoenix AZ. It also gets to about 118 degrees 🥵🔥. I use a 3 Vessel HERMS. I built an outdoor kitchen for the same reason. I love been outside and live brewing outside. Driveway, back porch, under a tree. Anywhere. "I ❤ Propane and Propane Accessories", "Butane is a bastard Gas" Hank Hill.. Cheers to both of you. 🍻🍺. Learned a ton.

    Hi! Great video. I have a few questions for you: How much does WLP565 yeast have phenolicity and spice? How are they better than dry yeast, such as M29 ? And how or with what do you cool the wort in the heat? And why so many sulfates, does saison need bitterness?

      Thanks for watching! WLP565 seems to have more of the clove spice flavor than peppery, but I could just taste more clove than pepper than others. I have never used the dry yeast version M29 which looks like the French Saison strain. I have used WLP590 and really enjoy that yeast. I actually think I prefer the French Saison strain and I think the dry yeasts being produced now are awesome, I would definitely like to check M29 out. To cool my wort I just picked up a jaded hydra immersion chiller. I absolutely love it! When it’s really hot out I plan to used my old chiller as a pre-chiller and run the water through that chiller in a bucket of ice water before running it through the hydra.

    1st! Watching meow. The color looks tremendous and I agree Saisons benefit from a bit of conditioning. Historically they were brewed in a different season than when consumed so there's nothing wrong with a bit of time on them. Love it dude! Pet your dog for me.

    I am not the biggest fan of bottling anymore either but some styles are a little better bottle conditioned, so I will bottle for those lol

    Thanks for the shoutout Brian! I appreciate it and also love brewing outdoors on propane! Saisons are killer and one of my most consistently brewed beers behind IPAs. Being able to get up to boil in only a few minutes is such a benefit. Prost!

    Love the shirt!!! Sessionable summer saison sound amazing...and alliteration win! Love the idea of some rye in there too. I really like that you showed the pros of the propane system, there are a lot and nobody talks about them.

    I too don't like bottling but to achieve the effervescent carbonation that a Saison benefits greatly from, it seems like the only way. After kegging about 10 saison batches (with a few bottles from each batch) I just can't seem to get the kegs to compare. I've tried upping the psi regime and lengthening the lines but I think bottling is the solution. Or perhaps priming in the keg is another alternative.

    I have an electric system but I brew outdoors all year long but I'm under cover. Don't mind the cold but down south, it not only gets hot but humid and when I used propane, it made things much hotter. But, I do help my brother brew sometimes and he has propane and there's no difference in the quality of our beers. I do like the easy CIP with my electric kit but it's not a deal maker.

      Nice!! I think I could easily brew outside with electric too. I mean extension cords are a thing😂. I do like some of the features in an all in one electric system too and am planning on picking one up at some in the future.

    I have used WLP565 many times, FG’s range from 1.002 to 1.006, usually 1.004.

    I would raise the carbonation at that gravity for a saison. And I would add spices. Not indian coriander, I would use orange peel. Love the grain bill, also.

    I take a little extra time to bottle off some beer after it goes into the keg. With 12 sanitized bottles and some carb drops, I split off a few for a rainy day (or to condition beers that will benefit from it) by kegging then setting my co2 to about 2psi to push it through my tap (and bottle/growler filler) into my bottle with a carb drop in it. I'm considering hooking up a bottling wand to the keg for an even easier split package

      That’s a good idea! I went the lazy route this time but I really feel like Saisons do well in the bottle.

      I feel dumb now that I didn't really think of this before. Sometimes when I collect too much wort for the fermenter I either dump it or I ferment it as a side beer in a one gallon carboy and then bottle it separately. I have a Fermzilla so I could totally just ferment in it and then bottle the remainder right off the fermzilla. The advantage of doing it the other way is that I can experiment with different hops extra in the one gallon container. The advantage of doing it your way is that you can compare the bottle conditioned versus the force carbonated one and essentially keep the same beer for the long haul.

    How do you deal with wind and blowing out your propane burner? That was always my biggest issue and caused me to switch. Also with an extension cord I can brew outside with my electric set up.

      It's usually not that windy here so I haven't had to deal with that issue yet. That day was about as windy as it gets. I did notice that it took a bit longer to heat up because of it. I still think there would be some great advantages with electric too and I am still contemplating making the switch. Do you use 240 or 110?

      @@ElementaryBrewingCo I do a brew in a bag with the gigawort which plugs into a 3 prong outlet (i think that is 110). I guess i have more wind issue as if i left it out and didnt watch it like a hawk i would come back it the propane was blown out :( but with electric it doesnt have that issue.

    Great video. Spread the Saison love! Glad to see you didn't get a stuck fermentation with the Dupont strain but low gravity, low mash temp, and high fermentation temp sure helps. I agree bottling sucks. Is Hallertau Blanc a hop that you have used in Saisons before? If so, I would love to hear about it. I think it is a relatively delicate low oil hop and I am not surprised that the hops got lost behind the yeast character. It would be interesting to do a Hallertau Blanc + Nelson Sauvin lager or brut IPA. I can' think of any other distinctly grapey hops.

      I know you love those Saisons as well!!!! Yeah I think next time with the hops I'll go with some more new world hops. I think the hops I used just got lost in there. Hallertau Blanc is fantastic in a light lager but this was the first time using in a Saison.

    I mash in a homemade cooler with a bazooka filter installed so I can do some manual circulation. Then I boil in a 30L pot out on my terrace with propane. My brewer friends ask me when I'm gonna buy a proper system !😄 My answer is always that the time I loose doing everything manually I gain using propane. You don't get 7000W of power with an electric system. I get to boiling FAST! The only disadvantage is that here in Sweden the weather is NOT pleasant all year round!

      In the fridge, I was debating on adding sugar to the keg and conditioning that way too at room temp. I took the lazy route. Cheers 🍻

    Fellow BIAB propane guy here. Glad to see the love on the system. For me saison are: "dryer the better". I often get caugh with a higher abv beer then intended that way. Saison for me is also all about the lemon tartness and the pepper. Sad you didn't get any in yours, although maybe clove for you is pepper for me? Saison is one I bottle, along with big beers (8%+). I have 3 kegs, and those are more sipper than daily thirst quenchers which I the prefered beer for me to keg... plus they age nicely too! Anyhow, thanks for the great vid and enjoy summer!

    I do small scale batches and even I can't be bothered with bottling. I live in a small flat with my girlfriend so 5L mini kegs work great for me 👍
