PUMPKIN FLAN -TRES LECHES - Flan de Calabaza

  • YOU WON'T STOP at a slice! This fall twist of two favorite classics it's absolutely SUPERB! Think pumpkin pie flavors with a creamy custard texture. YUM! YUM! It’s a creamy, dreamy custard that’s so soft, yet firm enough to hold its shape. Let me show you how to make it. It's quite easy to put together if you use a can of pumpkin puree. The caramel may scare some new bakers, but it's not that hard, really! Just be careful bc it's really hot, other ways it's "easy-peasy" :)
    CARAMEL:
    1 cup SUGAR
    1Tbsp VINEGAR
    Melt the sugar over low heat until melted. (5-7 min, depending on the heat you use). Do not burn it though, bc it can taste bitter.
    FLAN: Mix together:
    5 EGGS
    1 Can PUMPKIN PUREE (100% pure pumpkin), 15 oz/425g, or about 1+1/2 cup if choose to use real pumpkin (boil or bake)
    1 Can Sweetened Condensed Milk, 14 oz/395 gr
    1 Can Evaporated Milk, 12 oz (can be substituted with half/half, or whole milk)
    SPICES:
    1/8- 1/4 tsp SALT
    1-2 tsp CINNAMON,
    1 Tbsp VANILLA (Paste, preferable),
    and freshly grated WHOLE NUTMEG. About a half of one whole nut. The more, the merrier, in my opinion! I love a lot of nutmeg.
    p.s. of course, you can substitute with nutmeg powder, or with pumpkin spice, but keep in mind, freshly grated nutmeg it’s what I recommend 😉

    Why the vinegar in the sugar for the caramel?

      It can be done without it, but is used to keep the sugar from crystallization on the sides of the pan. It helps melt a little more smoothly.
