You should try putting it on low in a crock pot and using a gentle heat not frying it. Also you can grate or macerate it, cover it in grape seed or coconut oil and let sit for a week or two, shaking the jar daily and then strain when ready.

I use double pan boiling method by putting the olive oil in bottle, add grated carrot and sit the bottle inside the hot water but on low heat for longer period, turning the mixture. I kept the mixture afterwards for one week before sieved

You loose the nutrients when you fry it pls next time put the grated carrots 🥕 in a glass jar container add oil and just place it in a boiling water with low medium heat
