Fermented rice gives great nutrients, energy for the day. It's staple diet for many in South India too. One can eat and go do the manual work. Later people started looking down on it I assume it was a great stoke from industries to promote other products. I believe western world did some research on it and found it nutritional. I am so proud and glad to see that on the menu. Thanks for coving it.

In the authentic odia dishes mustard is the main ingredient , and it has been used for centuries as a substitute of garlic onion paste , to make the food satvic (most of the temples including Puri Jagannath temple use mustard for preparing the prasad for the God)

When eating *Pakhala,* you have to squeeze the liquid,which is called _torani_ (ତୋରାଣି), out of it first. Squeeze it hard enough to dry the rice but not too much, you'll squeeze the rice to mashes. When you're finished eating rice out of Pakhala then you drink the _torani_ . Sorry, the Odia in me just couldn't see you eating it in the wrong way. 😂
