Perhaps it's because I don't have a child, but I always took the "yes, when he’s sleeping" line to be simply due to the fact that... he’s a healthy, active and creative 11 year-old boy. That's a high enough level of energy to drive a not very young adult to make that comment 😂
As a mother of five, you're right on the money! It's definitely a joke about how rambunctious kids are and drive you right up the wall but look so darling when asleep you just want to squish their cheeks. ^^
One thing I deeply appreciate about this episode is the accuracy given to the crucifixion of Jesus. It's so rare to see the nails driven through the wrists and it makes me happy when they are. (Because I'm insane about historical accuracy). Also, my next favorite thing is how Crowley is female presenting during the crucifixion but there are no jokes made about it. There's no attention drawn to it so quite a few people miss that he's wearing a veil like a woman of that time and place would be wearing.
It's Crowley as in crow the bird, and _Supernatural_ has, I believe, Crowley as in crowd. In _Good Omens,_ Crowley was previously Crawley (as in "all" -- not sure whether the accent affects this) for crawling on the ground. I don't know whether this is helpful.

He corrects Aziraphale once (because he forgets and uses Crawley). On _Supernatural,_ they pronounce it like "crowd," I think, but that is a different universe and a different character. There is a reel of outtakes from the radio show of Peter Serafinowicz mispronouncing it and correcting himself ("Don't know my own name") and mispronouncing it again. But anyway.
You are correct that holy water destroys demons. Notice that Crowley had never known that holy water was kept out in fonts at Catholic churches until he was rescuing Aziraphale. That's when he realized he could get the holy water by stealing from a church. If he had gone through with the theft, imagine what those humans he sent in for the water would have thought! The whole "crime" would have made no sense to them. It would have made for a very funny scene! On the opposite side of things, hell fire is what can destroy angels.
I think you put too much weight on the "he's nice when he's asleep" bit from Adam's parents. There was a period in my life where I often said I would gladly put my children in a box and store them away. Children don't come with an instruction booklet and parents sometimes wish their kids would be nicer of just less exhausting, even if they are quite well-behaved from an outsider's point of view. Adam has an active imagination, so it is exhausting to keep up with him sometimes, that's probably the long and the short of it.

Crowley is definitely named after Aleister Crowley, the British occultist (1875 - 1947)
