Im currently living in UK and when I was living back with my parents, I can go any day without rice but in the back of my head, I still prefer eating any food with rice but now, as I live on my own, I realised why most Filipinos prefer eating rice everyday. Reasons: *Cheap and can last you for a month on your own. *The blandness flavour just really mix well with other flavours making the main dish stand out. *much easier to cook when you are lazy or tired from work *Rice is carbs. Carbs = energy. Energy = Being Happy

It's not really an obsession from the perspective of Filipinos but its part of the Filipino culture long before the Philippines has been colonized. Rice has been in the Filipino DNA since the beginning of time :-) The early Filipino ancestors are farmers and rice is the main crop that was produced during the early times. If you look deeply into the Filipino culture, you would notice that rice plays a part in the Filipino traditions like in native weddings, we throw rice grains at the bride and the groom to wish them a prosperous married life. You would also hear Filipino sayings like "Ang kasal ay Hindi parang kanin Na iluluwa pag napaso" (Marriage is not like you throwing up a hot rice that burned your tongue). Kakanins were created because it's a celebration of the harvest. Also, in the Cordilleras and in most Ilocano provinces, there are Rice gods that people worship. And then you also have folk tales of the black rice which comes from engcantos or mystical entities that if a human eat it, the human will became part of the engcanto's realm. You also have Tapuy and Basi, rice wines that are drunk for ceremonial rituals. In English rice is only rice but in the Philippines, rice could be palay (rice grain with husks), bigas (milled rice), kanin (cooked rice), tutong (burned rice), bahaw or kaning lamig (left over rice).

there are things that trigger satiety. the stretch receptors in our GI tract and various mysterious receptors for nutrients. if you drink lots of water, you will feel full because the stretch receptors are engaged. later on, you will feel hungry, because water dont have alot of nutrients. on the other hand, if you eat lots of nutrient rich foods, you will feel full for many hours. this is the reason why some diets are very satiating. an example would be low carb diets. all youre eating is just meat with some vegetables. the stretch receptors are engaged by the vegetables, and you get lots of nutrients from the meat.

The simple answer is that to a Filipino, a proper meal is composed of ulam and rice. Take away the rice and it’s just ulam and you’re not really having a meal, you’re just “papak”-ing. Rice is a sort of flavor regulator, where the eater gets to control how much flavor to have in each bite or how many rice bites to have in between each ulam bite. Salty, rich, savory and/or oily are all components of ulam and without rice you get too much of one or all those components. Rice also gives the eater the ability to control how big of a meal they can have for the same amount of ulam (bang for the ulam buck). When you eat out, serving sizes are relatively small when it comes to the ulam, so you make it up by having more rice. Unli-rice is a sort of guarantee you’re full after the meal, which is usually the goal. Its true, when I was a kid and we'd go on vacation, my parents could only go without rice for a few days before my mom would say "I don't care where we eat as long as there's rice", and proceed to take us to the nearest Chinese restaurant. I'm the same way now. I even bring microwave rice with me on tour lol.

I can take bread for breakfast but I don't get sated if I don't have rice for lunch or dinner. If I don't eat rice for one day, I got to have big merienda in between meals. I don't need merienda if I have rice.
Easy fix, eat your rice, by balance it with more veggie focused dishes like pinakbet. I mean when we have that, I usually load tons of eggplant, beans, squash, etc.

Plain white rice is very affordable food, it acts as carbs to fuel your daily mental/physical activity and ofcourse it has some nutrients in it. That's why it has been the staple food in the Philippines.

Because it basically stretches any meal to points that could fill up a person without consuming much meat, which is a lot more expensive. Plus, it doesnt taste like much on its own, so it's the perfect addition to our sweet/savoury/spicy cooking since it wont take over the dish's flavors.
It's not just rice though. Filipinos love carb loading. I remember the days when we used to eat the sweet sweet Filipino spaghetti as a sandwich in between two white bread. Or pancit with white bread. Or god knows what carb with white bread. Also a lot of older Filipinos eat rice in coffee, that's right, coffee!
Uy...! Rice pa more. Chris, check out the many native and endemic rice varieties. One of my personal favorites is TINAWON of Banaue. I used to travel a lot in my 20s as a rights and cultural advocate and I developed my rice collection from various regions in the country because of Tinawon. My other favorite is our own native long grain rice in Panay. It is called Tudru Daraga (translates to Lady fingers). The Tumandok of the Madia-as mountain ranges in the heart of western Visayas plant them mostly for their families only. A lot of indigenous peoples In the country keep these precious heirloom ancient rice varieties like the Tinawon of Northern Luzon and the Tudru Daraga of Western Visayas. In some remote places in the visayas and Mindanao, we even got wild rice growing in shallow rivers.

Trivia dear... Pinas was the center of rice development in the world. It was because we had the most number of rice varieties. The government agency responsible for this research and development still exists and is called International Rice Research Institute (IRRI). Now, all rice eating countries of the world came to the Philippines to learn rice cultivation in all sorts of climate and terrain. Heck, even people from desert countries went here to study rice cultivation. The irony and saddest thing now is that we import rice. And it's not because of land conversion that causes the rice supply shortage but the other way around. The succession of administration's this country was subjected to were responsible for the collapse of the agriculture sector. Thanks the IMF and the World Bank, they managed to cook up unfair trade agreements that enabled the ridiculous importation of rice. Abandon the agriculture (which has always been the blood and fortune of this country) and there you go, justified rice importation. All other cultures spoke of their marvel of agriculture and rice of this country in their history books... saying theyre stunned with the sea of of endless gold because of the vastness of our rice fields. We even got them carpeting our mountains even before China did too. Banaue isn't even the oldest. The mother of our rice terraces is in the Madia-as Mountains deep in the middle of Panay Island.
This obsession I find very different frm my culture. We eat rice but it's not as prominent like the Filipinos or other Asian countries🤷♀️. I'm frm the Caribbean.. but this strong cultural anomaly/aspect is very interesting lol.

Btw, another way to make use of leftover rice is to turn it into ampaw. In my childhood years in manila, ampaw was a common afternoon snack. It was prepared by sun-drying leftover rice, then frying it. It was served simply by adding sugar to it... oh, i miss ampaw.
rice is an energy food that's even taught in school. for u to do things properly one should not miss rice other wise u'll get tired really easily. it's a very hot country we need to move more and we also sweat a lot we need that kind of energy. have u notice as a foreigner u need to rest at around 9pm coz ur body wants to and all the filipinos around u are still planning for a party that would last until 2am. hahaha that's because of rice. a german friend of mine understood that he can now party 2 nights in a row because of rice. .

Other countries like japan and korea are newbies to rice. They got if from chinese influence who in turn got it from Filipino ancestors when they still lived in china. So rice originated from Filipino ancestors. That means that koreans, and japanese developed a culinary culture without rice far longer than with it and can eat very little of it. Here is an answer to why rice is the center of any filipino dish.. it is because unlike other carbohydrates rice is the perfect catalyst for any dish.. rice balances the flavor of any ulam in a perfect way that pasta, bread, and potatoes can't it also helps us feel that satisfaction that we are full unlike those other carbos.. plus we grew up having rice as the center of the table... rice is king to us filipinos..
My knees are shaking whenever I skip rice either breakfast ,lunch or dinner.. Also, I get easily hungry, like an hour after eating, if I eat bread or potatoes instead of rice..

Ok, this is going to be long... sorry... It's something. That I ask myself too, having lived outside the Philippines for more than a decade, I can now eat my meals without rice. But I still have a deeper attachment to rice that for me it's still a treat. Here are my ideas but it's just me and my experience growing up with rice. 1. It's culture. - I mean if you've grown up with it, it's not easy to take it away. Same is true with your tradition, mindset, religion, etc. once it's embedded in your subconscious, it takes a huge paradigm shift to reverse it. And it feels like you have no other options other than the one you are used to. I think the same reason applies with food. 2. Rice comes in abundance. -we are blessed to have a rich soil that allows to grow rice everywhere. But unlike other plant based food, rice is something that we can store for longer periods. Besides rice is native to Southeast Asia or Asia for that matter. 3. Poverty - if you have a small amount of money on your pocket and there is only one thing that needs to be served on the table, what would it be? Rice can literally go with everything. My Chinese friend even compared it to a blank canvas and the 'ulam' as the paint to create a masterpiece of taste. So if you only had salt left in your cardboard or fish sauce, that's good enough for a meal because even stuff with basic taste can go along with rice. I in my childhood had ketchup, chicharon, coffee, chocolate, bagoong, soy sauce, chips, lard, butter, margarine, mango... pretty much most of the condiments, beverages, and junk foods had served as my ulam with rice. 4. We've adapted to rice. - Foreigners don't understand this. When we say that we will die if we don't eat rice, we do mean it. For sure we won'r necessarily die, but we will have withdrawal syndromes if we stop eating rice. especially when we practically eat rice to more than three times a day for all of our lives. That includes fainting, dizziness, weakness, shakiness... stuff I've experienced or have seen others experienced when we deprive ourselves with rice. Of course there are other carbs to pull as through during these times but then again since we are used to rice, it doesn't satisfy. And what this means is that eating other carbs can fill the stomach, but that doesn't mean we're content. When we say we would die without rice, that's physically, mentally, and emotionally. 5. Tropical life is not sedentary - if you live in the tropics, you'll need all the carbs you can get because we don't have winters where you can just practically hibernate and survive on fats. I don't know much about Australia but in the Philippines, 21 degrees is cold and you can even see people wearing jackets and sweat shirts in this temperature. But as it is generally summer all around, we have access to food and rice everyday. There's no need to hibernate. And if you have this luxury, you won't last a day without eating the food you're used to. It's like when you start intermittent fasting. First three days you'll be weak but once you get used to not eating, you can even last a week without eating. And you don't get picky whatever is served on the table. But if you're dependent on carbs that's easily accessible to you, you'll be relying on your sugars and insulin to keep going. Again this is just me, I'm sure there's a much more scientific based reason for the Filipino unli-rice phenomenon.
I do that too on white rice for breakfast when I was a kid... But if its fried rice, I pour tabliya(native hot chocolate) and tuyo for ulam at breakfast.
well, rice has not always been a staple Filipino food as it was once only served during festive occasions (pre-colonial period) as offering to Dumangan (apparently, Philippine god of harvest) but during the Spanish colonial period, because of it (rice) being a valued food, Spanish rulers demanded it as tribute or payment. It was then when the cultivation of rice became prevalent until it came to a point when farmers are harboring enough rice not only to pay tributes but also to feed an entire village. So from eating crops like kamote (because non-royal Filipinos are not allowed to eat rice during pre-colonial period) every Filipino had been able to enjoy the grain eversince.
When i was young i do love rice and never get fats, why? because, i only eat small portion and don’t mix it with burger or any heavy junk foods...what makes me fat now is i became addicted eating outside not knowing there’s a lot sugar in it...if u eat rice today don’t eat pasta or pan...the next day if u plan to eat pan don’t eat rice...so it’s either, u eat rice or pan or pasta for the day.

Not only filipino love to eat rice but almost all asian counties live to eat rice as their basic food. Kung walang kanin sa meal is incomplete hindi mabbusog at hundi maggutom kaagad.
For me need namen ng rice dahil makakatipid ng pera at masasatisfied pa yung tiyan mu. Example, #1... if you buy a grilled whole chicken worth 220 pesos, only 2 - 3 person will be satisfied of there hunger. But if you put rice on it, it can stretch up to 4 - 5 person. So you only need 1 whole chicken plus 1 kg rice worth of 56 pesos (it depends on what kind of rice) and 4 or 5 people will feel full for that meal and some times there's a left over for the next meal, But if you only eat the whole chicken, you'll gonna need 2 whole chicken (440 pesos) for 4 to 5 person. #2.... It also balanced the taste of the ulam. Like bagoong, we need to balance the saltiness with a rice. #3.... And last it gives us more energy throut the day.

Yes all Asian countries the people eat rice but for Filipinos 1 plate of rice is not enough, especially in a hungry mode 5 to 7 plate will be devoured 😁.
Dude it's pretty simple, it's our diet. From child until growing as an adult we are forced to eat rice because that's what the local market sells. We can cook pasta yes but it's too expensive to cook pasta for just one meal. Nakalakihan na namin ang rice, we can switch things but our stomach needs rice. I don't even like rice that much but there's nothing out there that is cheap and convenient.

A meal with no rice is a nothing but a snack. I can eat 15 chicken pieces but without rice it's nothing but an afternoon snack

there are things that trigger satiety. the stretch receptors in our GI tract and various mysterious receptors for nutrients. if you drink lots of water, you will feel full because the stretch receptors are engaged. later on, you will feel hungry, because water dont have alot of nutrients. on the other hand, if you eat lots of nutrient rich foods, you will feel full for many hours. this is the reason why some diets are very satiating. an example would be low carb diets. all youre eating is just meat with some vegetables. the stretch receptors are engaged by the vegetables, and you get lots of nutrients from the meat.
Filipino viands are a little on the salty, sometimes sweet sour side and to tone it down and make it more filling, we need a lot of rice.

The simple answer is that to a Filipino, a proper meal is composed of ulam and rice. Take away the rice and it’s just ulam and you’re not really having a meal, you’re just “papak”-ing. Rice is a sort of flavor regulator, where the eater gets to control how much flavor to have in each bite or how many rice bites to have in between each ulam bite. Salty, rich, savory and/or oily are all components of ulam and without rice you get too much of one or all those components. Rice also gives the eater the ability to control how big of a meal they can have for the same amount of ulam (bang for the ulam buck). When you eat out, serving sizes are relatively small when it comes to the ulam, so you make it up by having more rice. Unli-rice is a sort of guarantee you’re full after the meal, which is usually the goal. Good job on your videos, I appreciate what you do for the Filipino cuisine and congrats on the book (which i recently bought at a japanese bookstore in Seattle).
Its true, when I was a kid and we'd go on vacation, my parents could only go without rice for a few days before my mom would say "I don't care where we eat as long as there's rice", and proceed to take us to the nearest Chinese restaurant.

Rice is basically like omni bread
Easy fix, eat your rice, by balance it with more veggie focused dishes like pinakbet. I mean when we have that, I usually load tons of eggplant, beans, squash, etc.
I think most Asians prefer rice as their main diet. My mom always tells me if she doesn’t have rice with her meal, it’s not as filling.

I remember when we had zero food other than rice, we would do rice with patis, or toyo, or ketchup, or coffee as sabaw. That alone was satisfying for a meal. It’s the one thing that’s always there when you are too poor to afford protein and not have a veggie garden. That’s what makes rice and filos inseparable.

Because it basically stretches any meal to points that could fill up a person without consuming much meat, which is a lot more expensive. Plus, it doesnt taste like much on its own, so it's the perfect addition to our sweet/savoury/spicy cooking since it wont take over the dish's flavors.
It's not just rice though. Filipinos love carb loading. I remember the days when we used to eat the sweet sweet Filipino spaghetti as a sandwich in between two white bread. Or pancit with white bread. Or god knows what carb with white bread. Also a lot of older Filipinos eat rice in coffee, that's right, coffee!

Chris, check out the many native and endemic rice varieties. One of my personal favorites is TINAWON of Banaue.
I used to travel a lot in my 20s as a rights and cultural advocate and I developed my rice collection from various regions in the country because of Tinawon. My other favorite is our own native long grain rice in Panay. It is called Tudru Daraga (translates to Lady fingers). The Tumandok of the Madia-as mountain ranges in the heart of western Visayas plant them mostly for their families only. A lot of indigenous peoples In the country keep these precious heirloom ancient rice varieties like the Tinawon of Northern Luzon and the Tudru Daraga of Western Visayas. In some remote places in the visayas and Mindanao, we even got wild rice growing in shallow rivers.
Haha rice is life! Our ulam is so savory that need to tandem with rice and its fulfilling.

Pinas was the center of rice development in the world. It was because we had the most number of rice varieties. The government agency responsible for this research and development still exists and is called International Rice Research Institute (IRRI). Now, all rice eating countries of the world came to the Philippines to learn rice cultivation in all sorts of climate and terrain. Heck, even people from desert countries went here to study rice cultivation.
The irony and saddest thing now is that we import rice. And it's not because of land conversion that causes the rice supply shortage but the other way around. The succession of administration's this country was subjected to were responsible for the collapse of the agriculture sector. Thanks the IMF and the World Bank, they managed to cook up unfair trade agreements that enabled the ridiculous importation of rice. Abandon the agriculture (which has always been the blood and fortune of this country) and there you go, justified rice importation.
All other cultures spoke of their marvel of agriculture and rice of this country in their history books... saying theyre stunned with the sea of of endless gold because of the vastness of our rice fields. We even got them carpeting our mountains even before China did too. Banaue isn't even the oldest. The mother of our rice terraces is in the Madia-as Mountains deep in the middle of Panay Island.
This obsession I find very different frm my culture. We eat rice but it's not as prominent like the Filipinos or other Asian countries🤷♀️. I'm frm the Caribbean.. but this strong cultural anomaly/aspect is very interesting lol.

Interesting question/observation about the Pinoys' love for rice. But i think it's like asking why americans like supersized meals, why brits love tea or why other asians dig spicy food.
Btw, another way to make use of leftover rice is to turn it into ampaw. In my childhood years in manila, ampaw was a common afternoon snack. It was prepared by sun-drying leftover rice, then frying it. It was served simply by adding sugar to it... oh, i miss ampaw.
rice is an energy food that's even taught in school. for u to do things properly one should not miss rice other wise u'll get tired really easily. it's a very hot country we need to move more and we also sweat a lot we need that kind of energy. have u notice as a foreigner u need to rest at around 9pm coz ur body wants to and all the filipinos around u are still planning for a party that would last until 2am. hahaha that's because of rice. a german friend of mine understood that he can now party 2 nights in a row because of rice. .

Why are Filipinos obsessed with rice? Because they've been eating rice for 10,000 years. What does that mean? It means that the entire culture and it's existence is based on rice. Other countries like japan and korea are newbies to rice. They got if from chinese influence who in turn got it from Filipino ancestors when they still lived in china. So rice originated from Filipino ancestors. That means that koreans, and japanese developed a culinary culture without rice far longer than with it and can eat very little of it. Millet and rice is part of austronesian culture.

I remember when the Total Gas station near my house had a promo that for every P1,000 of fuel spent, you get a free kilo of rice. The lines were pretty long and they always run out of rice.

Here is an answer to why rice is the center of any filipino dish.. it is because unlike other carbohydrates rice is the perfect catalyst for any dish.. rice balances the flavor of any ulam in a perfect way that pasta, bread, and potatoes can't it also helps us feel that satisfaction that we are full unlike those other carbos.. plus we grew up having rice as the center of the table... rice is king to us filipinos..

And it has to be THE perfect texture or else it won't be as satisfying no matter how delicious the ulam is. Some people like their rice soft and mushy, others like theirs fluffy and buhaghag.
Ok, this is going to be long... sorry...
It's something. That I ask myself too, having lived outside the Philippines for more than a decade, I can now eat my meals without rice. But I still have a deeper attachment to rice that for me it's still a treat.
Here are my ideas but it's just me and my experience growing up with rice.
1. It's culture. - I mean if you've grown up with it, it's not easy to take it away. Same is true with your tradition, mindset, religion, etc. once it's embedded in your subconscious, it takes a huge paradigm shift to reverse it. And it feels like you have no other options other than the one you are used to. I think the same reason applies with food.
2. Rice comes in abundance. -we are blessed to have a rich soil that allows to grow rice everywhere. But unlike other plant based food, rice is something that we can store for longer periods. Besides rice is native to Southeast Asia or Asia for that matter.
3. Poverty - if you have a small amount of money on your pocket and there is only one thing that needs to be served on the table, what would it be? Rice can literally go with everything. My Chinese friend even compared it to a blank canvas and the 'ulam' as the paint to create a masterpiece of taste. So if you only had salt left in your cardboard or fish sauce, that's good enough for a meal because even stuff with basic taste can go along with rice. I in my childhood had ketchup, chicharon, coffee, chocolate, bagoong, soy sauce, chips, lard, butter, margarine, mango... pretty much most of the condiments, beverages, and junk foods had served as my ulam with rice.
4. We've adapted to rice. - Foreigners don't understand this. When we say that we will die if we don't eat rice, we do mean it. For sure we won'r necessarily die, but we will have withdrawal syndromes if we stop eating rice. especially when we practically eat rice to more than three times a day for all of our lives. That includes fainting, dizziness, weakness, shakiness... stuff I've experienced or have seen others experienced when we deprive ourselves with rice. Of course there are other carbs to pull as through during these times but then again since we are used to rice, it doesn't satisfy. And what this means is that eating other carbs can fill the stomach, but that doesn't mean we're content. When we say we would die without rice, that's physically, mentally, and emotionally.
5. Tropical life is not sedentary - if you live in the tropics, you'll need all the carbs you can get because we don't have winters where you can just practically hibernate and survive on fats. I don't know much about Australia but in the Philippines, 21 degrees is cold and you can even see people wearing jackets and sweat shirts in this temperature. But as it is generally summer all around, we have access to food and rice everyday. There's no need to hibernate. And if you have this luxury, you won't last a day without eating the food you're used to. It's like when you start intermittent fasting. First three days you'll be weak but once you get used to not eating, you can even last a week without eating. And you don't get picky whatever is served on the table. But if you're dependent on carbs that's easily accessible to you, you'll be relying on your sugars and insulin to keep going.
Again this is just me, I'm sure there's a much more scientific based reason for the Filipino unli-rice phenomenon.
I think this is the most accurate answer. You can officially write and publish your own book.....
This is true; we love rice! My dad will eat a big cheeseburger and fries and not feel like he had a meal---only a snack---unless there's rice.

well, rice has not always been a staple Filipino food as it was once only served during festive occasions (pre-colonial period) as offering to Dumangan (apparently, Philippine god of harvest) but during the Spanish colonial period, because of it (rice) being a valued food, Spanish rulers demanded it as tribute or payment. It was then when the cultivation of rice became prevalent until it came to a point when farmers are harboring enough rice not only to pay tributes but also to feed an entire village. So from eating crops like kamote (because non-royal Filipinos are not allowed to eat rice during pre-colonial period) every Filipino had been able to enjoy the grain eversince.
Maybe because Rice is cheaper to have than a lots of Main Course Meal
When i was young i do love rice and never get fats, why? because, i only eat small portion and don’t mix it with burger or any heavy junk foods...what makes me fat now is i became addicted eating outside not knowing there’s a lot sugar in it...if u eat rice today don’t eat pasta or pan...the next day if u plan to eat pan don’t eat rice...so it’s either, u eat rice or pan or pasta for the day.

feeling full after a meal is one thing but feeling full and satisfied is another, thats what rice does to a pinoy. plus in my opinion most filipino dishes are good to eat over rice compared to other carbs.

Not only filipino love to eat rice but almost all asian counties live to eat rice as their basic food. Kung walang kanin sa meal is incomplete hindi mabbusog at hundi maggutom kaagad.
For me need namen ng rice dahil makakatipid ng pera at masasatisfied pa yung tiyan mu.
Example,
#1... if you buy a grilled whole chicken worth 220 pesos, only 2 - 3 person will be satisfied of there hunger. But if you put rice on it, it can stretch up to 4 - 5 person.
So you only need 1 whole chicken plus 1 kg rice worth of 56 pesos (it depends on what kind of rice) and 4 or 5 people will feel full for that meal and some times there's a left over for the next meal,
But if you only eat the whole chicken, you'll gonna need 2 whole chicken (440 pesos) for 4 to 5 person.
#2.... It also balanced the taste of the ulam. Like bagoong, we need to balance the saltiness with a rice.
#3.... And last it gives us more energy throut the day.
My,My,Simple,we Filipinos really loves RICE,we just could not get thru the day without this grain and yes we have really mastered the art of adapting rice to any viands,local or foreign. Dude it's pretty simple, it's our diet. From child until growing as an adult we are forced to eat rice because that's what the local market sells. We can cook pasta yes but it's too expensive to cook pasta for just one meal. Nakalakihan na namin ang rice, we can switch things but our stomach needs rice. I don't even like rice that much but there's nothing out there that is cheap and convenient.
