The beauty of public food stalls like this, is that unlike in a restaurant, you can see what's going on. If you like what you see, you buy. If not, you walk on by. Don't like the hygiene? Don't buy. If other people want to buy, then they will decide for themselves. It really is that simple.
Nice! I love when people share street foods from other cultures. I've learned so much from my travels that my family doesn't ever have to eat the same dish more than twice for MONTHS unless the dish is a fave. Some street foods can have very unhealthy ingredients though, so make sure to save those foods for something special like a holiday, sporting event, birthday etc. Thank you dear poster. 😊

For anyone who didn’t notice, that is the legendary Raymond Blanc (Chef patron at Le Manoix aux Quat’ Saisons) ordering a small salad at 23:14. So many amateur food inspectors in this comment section. Things that I saw were fine. Using the same spatula for raw and then cooked patties may touch raw meat juices to the exterior of the patty, but there it is immediately brought to safe temp as soon as it touches the grill or even the patty itself which on the outside probably runs over 200. The danger is internal temp at the center of the patty which takes time.
That cheese stuff they were making in the beginning, i need that, a lot. Also, at the Pequod, i'd the order the phone number of the lady in the back. So much good stuff here, i haven't smelled or tasted any of it, but a lot looks like really good stuff.
Yea its a popular around Spain and Morocco, basically around that side of the Mediterannean. Its called Torta. Potatoes and eggs, but i think this version had cheese.

@serena brown a Mexican tortilla is the flat, pancake type thing. In Spain an egg omelette like that is called a tortilla.
