    I presume the amount of water is quite critical. I had to throw the first batch out because I only used a small amount of water and it became a solid mass of white sugar. For my second attempt I followed everything else that you said to the letter ie. no stirring just jigging the pan around, and used about 1/2 cup water and the caramel remained "runny" so it came out better. Lovely brittle.

    Burnt sugar flavor is a good thing - if it doesn’t cook enough you’ll have peanut bendle

    Why not put any utensils in the sugar while you wait for it to brown? I dont get it. Every other recipe still stirs their sugar?

      Hello. In this recipe, we have to caramelize the sugar first because we aren't using corn syrup. When I need to caramelize sugar, I don't like scraping the sides throughout the process. My method worked out very well. You are welcome to use utensils if you wish, I can't guarantee the outcome of the caramelized sugar. Have a great day!

    But that is too dark and it looks a little well burned I'm sorry and I didn't catch all the amounts of the ingredients you didn't specify how many was it one cup of sugar 2 cups I'm not too sure what to do with that and I've been told it's always good to put some baking soda at the very end with vanilla extract and it gives it a nice texture and definitely the amount of heat that you used wasn't specified and I think you probably made it a little too hot the whole time so maybe to bring it to a boil on medium heat and this way you can have that nice golden color you were talking about but other than that great job
