In regards to your aversion to having two Millennium Falcons, you could always convert the second YT-1300 into one of the numerous YT-1300 variants from the Haynes Manual. Center Cockpit, Armored Cockpit and Roof-mounted Cargo Pods are the most common configurations I've seen for conversions, and they look noticeably different from the Millennium Falcon.
What about if I were facing three YT-1300s? Such as this build I saw run recently, which sounds like the one briefly alluded to around 1:30 in: 3x Outer Rim Smuggler, with Intelligence Agent Navigator Anti-Pursuit Lasers
It wasnt clear for me, because he used a different model to represent the Falcon: If the player uses 2 Falcons in such a close formation does this even work? Because the 2 models would overlap each other. What happens in that case? I know that distances etc. are measured from the base, but does this anyhow prevent such a formation or do you just take away one model?
I'm a new player, but my understanding is that you would play them at two different heights. The models have two vertical sticks that attach them to the base. One Falcon would be played with two sticks, and the other would be lowered down to one stick.
Allow me a little correction: Those ships are YT1300, also called Corelian Transports or Corelian light freighters. Millenium Falcon is the name of a particular one, that owned by Han Solo. So there's absolutelly no problem in having 2 of them in play. :)
YT-1300s are easy-mode. I hate seeing new players have to go up against them because they end up frustrated and thinking the game is unbalanced. It isn't that at higher levels of play that they dominate (they don't) but at lower levels you can play badly and still be competitive.
Just saying... Dual falcons are nowhere near overpowered, just a little annoying. If you want to do a useful strategy guide, tell us how to beat 7-8 Tie Swarms reliably. Also i actually own 2 Falcons, one of which i have repainted and taken off the Satellite dish to make it a standard YT.

Great videos. Would love to see more "how to beat" videos. Especially how to beat Vader/Turr/Soonter squads.

In the movies and story, yes. Buuuuut you could have a Vader at 11 pilot skill.

Falcon is nice, but from my experience YT2400 is giving you much more opportunities. Even with the cheapest pilot.

That way one is the falcon, the other one a standard YT. Where is the problem with that? So i hope this does not "break your heart".
