You used a red grease on lower timing chain , upper chains , also , looks like Redline , are sprockets and tensioners for the cams new , cams , also the crank gear , most of the stuff looks new , did you replace the oil pump , great work , i got a HR , gonna’ try to rebuild it ,
For this engine, I kept the stock oil pump and added a small Boundary Engineering shim to slightly increase oil relief pressure. Also, yes, I use Redline assy lube for every build. It's fantastic stuff.
I don't recall the torque specs off the top of my head, but there are two differently rated bolts on the inner cover. One is around 8 ftlbs and the other around 12 ftlbs if I remember correctly. It's all in the VQ37VHR FSM.

What’s really stopping me from welding the gallery plates to the cover
If camshaft bank 2 does not have the same directions making engine heat up and lost water after 30 mins

They're all in the FSM for a 370Z. All of the 10mm bolts will be between 8-11 ftlbs if I remember correctly. Always consult with the FSM.

In some instances, yes. There are a lot of differences though. I recommend you to refer to your FSM.

Because I've yet to see one fail even at over 250,000 miles and it's a budget build. Feel free to replace yours if you build one.
