I made this based off your recipe. Lasted an impressively long time. Not sure the medieval palate for nutmeg is quite to my liking, but it's a hardy dish. Would like to try one of the Roman recipes next.
If you don't like a spice, just skip it. There is nothing strict in medieval cuisine and medieval cooks always recommend following your taste. Sometimes, we need a process of trial and error to learn which is exactly our taste. The best way is to continue trying and experimenting with ingredients and recipes.

2 things: first, I really want to prepare a side by side comparison with one following the recipe this way and a second where you temper the egg before adding it because I really want to know how or if that would change the consistency. Second, I love that the author basically said that onions are for himbos and I am 100% down for that
