    Bitter gourd fry, or Kakarakaya Fry in Telugu, is a popular dish in Rayalaseema known for its unique bitter flavor. Here's how you can prepare it:
    Ingredients:
    2-3 medium-sized bitter gourds (kakarakaya)
    2 tbsp oil
    1 tsp mustard seeds
    1 tsp cumin seeds
    1 medium-sized onion, finely chopped
    1-2 green chilies, slit
    1 tsp ginger-garlic paste
    1 tsp turmeric powder
    1 tsp red chili powder
    1 tsp coriander powder
    1 tsp garam masala (optional)
    Salt to taste
    Fresh coriander leaves for garnish
    Preparation:
    Prep the Bitter Gourd:
    Wash the bitter gourds and slice them thinly.
    Sprinkle a bit of salt and turmeric on the slices and set aside for 20-30 minutes to reduce bitterness.
    Rinse the slices under water and squeeze out excess moisture.
    Fry the Bitter Gourd:
    Heat oil in a pan. Add mustard seeds and cumin seeds, and let them splutter.
    Add chopped onions and green chilies, sauté until onions turn golden brown.
    Add ginger-garlic paste and sauté until the raw smell goes away.
    Add the bitter gourd slices and stir well. Fry on low to medium heat, stirring occasionally, until the bitter gourd becomes crispy and golden brown.
    Add Spices:
    Once the bitter gourd is well-fried, add turmeric powder, red chili powder, coriander powder, and salt. Mix well and fry for another 3-4 minutes until the spices are well combined.
    If you want an extra kick, add garam masala at the end and give it a quick stir.
    Finish and Garnish:
    Turn off the heat and garnish with fresh coriander leaves.
