    The chef is very calm and shy. She must be noisy about her amazing cooking skills. She is not in control here. She is the boss in this video. She needs to do most of the talking not being led. The tomato is buried under under the kapenta to allow tomato flavour soak into the fish and maintain moisture. Wow!!! the wooden dishes are soooo natural, Afrikan, unique and amazing.

    You are doing a good job. Just saw the link on WhatsApps from my sister inlaw and I just followed it and guess what! I'm now a follower. Even on Instagram so that I don't miss anything. I enjoy cooking and knowing different types of cooking for me is an inspiration for me. I miss Zambian food 🍱.

    Great show ladies. Love the cooking tutorials for Zambian traditional food. Just one request, can you please include information, maybe as text on the screen as you add ingredients or in the description below on the quantities of kapenta and other ingredients used as well as cooking times in between adding/mixing ingredients?

    Yes Lulu, anchovies should be the term. I love kapenta and I love the kapenta by you two ladies. Will start including garlic in my kapenta too. I think the little well is to soften the tomatoes quickly so that they 'stew' on their own but with the kapenta on the sides. Then everything is folded together towards the end. This enables the kapenta to be juicy but not soggy, while maintaining some crispness. Some enjoy it that way.

    Chisense is from Luapula province. Its actually cheaper than the other types because its sandy.
