Hold each smash for 10 seconds and smash hard to achieve that glorious crust! Allow patties to cook until a good amount of juices form on top as well as color, flip, apply cheese to each patty and then place the top bun on one, then to bottom bun on top of the other half bun (as shown in video) to get some delicious steam from the patties while the cheese melts. Prayers for you as you miss your dad. I am from Oklahoma and grew up about 30 minutes from El Reno. Sid's is absolutely the best Oklahoma Fried Onion Burger you will ever have. I hope you get to visit there sometime. You will be blown away by how good these burgers are. So at Sid's, there is a large bin of hamburger meat next to the grill. Marty grabs a handful and puts it on the grill...no measuring done. He uses a brick trowel to smash the meat into as flat a patty as possible, especially "smooshin'" out the edges. A handful of thinly sliced onion is added on top. The rest of the process is pretty much like yours. That's the good stuff!

Awesome tribute Mike, that last part made me tear up a little bit. My Dad and me weren’t real close for a long time (he lived in Florida and I’m in PA). He was diagnosed with cancer in 2015 2 months after my step-mom died. Since I had just retired I was lucky enough to spend the next 6 months taking care of him in Florida with my wife. Probably the closest we ever were and although it was hard to see him suffer I wouldn’t trade that time for anything. Glad to hear you are going to use this opportunity to go full time. I’m sure your pop is proud.

Awesome recipe, top notch review ("smooth sailing" :-) ), and sincere as always, I appreciate this very much. As for your father, having lost mine a little while ago, what made it easy for me to accept his passing was the realization that even as he left he gave me one final gift. All our lives we rely on them to be our rocks. The roof over our head. Even when we become independent we need that knowledge that they are there. But when they leave, we have to become that same rock for our kids, our loved ones. So the final gift they give us is the chance for us to become like them :-)
I truly appreciate your kind words and wisdom, Aasem. I truly feel as though I’ve grown into my Father’s shoes since his passing. I’ll always love and miss him. Life holds many unpleasant realities and we are defined by how we handle and grow from them. I’m doing my best to make him proud. He was always my biggest fan on TH-cam. I’m sure he’s still watching.

For me, I'll never get over it. Thanks to a lot of counseling and the passage of time I have learned to live with it. Today, when I see one of my Mother's paintings, a picture of my parents, or just think of them, I smile. I was blessed to have the best parents in the world. Take your time to grieve and keep cooking brother. We need you.

@@EverydayBBQ Mike, I watched the video and I will do my best to griddle up some onion burgers like yours. The stages of grief are nasty and non-linear. I recommend grief counseling...it doesn't take a lot of time and talking to a professional can be quite helpful. I've said a prayer for you and your family...my prayers get answered a lot so that's a thing.
Growing up in Oklahoma and working in a couple of burger joints as a teenager, plus eating in a couple million more, I believe you have done a pretty creditable job. We were taught to place the sliced onions in a clean dishrag and wring out much of the water prior to tossing them on the grill, though. It helps with caramelization. I'm sorry for the loss of your father.

Now I think that it was a great idea and I saw an episode of Man v Food that covered this recipe and I think that it featured Sids Diner in it. Now let me just say that burger looked devise. So simple in it's make up, but so delicious. Nice to see your daughter liking the burger too.

I'm so sorry you lost your dad, and somehow your video's got lost on youtube, SO glad to have found them again. Around the same time as you lost your dad I lost my oldest brother (52) to covid19. It was a very tough time but so many people have been there for me and my family, that sure helped. I still miss him every day, but the sharp edges are gone. Went to the movies with my other brother yesterday and he said, I'm sure Jeroen wouldn't want us to stop enjoying life, and I agree. So that's what we are doing. Trying to get the most out of life. Awesome tribute Mike, that last part made me tear up a little bit. My Dad and me weren’t real close for a long time (he lived in Florida and I’m in PA). He was diagnosed with cancer in 2015 2 months after my step-mom died. Since I had just retired I was lucky enough to spend the next 6 months taking care of him in Florida with my wife. Probably the closest we ever were and although it was hard to see him suffer I wouldn’t trade that time for anything. Glad to hear you are going to use this opportunity to go full time. I’m sure your pop is proud.

As for your father, having lost mine a little while ago, what made it easy for me to accept his passing was the realization that even as he left he gave me one final gift. All our lives we rely on them to be our rocks. The roof over our head. Even when we become independent we need that knowledge that they are there. But when they leave, we have to become that same rock for our kids, our loved ones. So the final gift they give us is the chance for us to become like them :-)
I truly appreciate your kind words and wisdom, Aasem. I truly feel as though I’ve grown into my Father’s shoes since his passing. I’ll always love and miss him. Life holds many unpleasant realities and we are defined by how we handle and grow from them. I’m doing my best to make him proud. He was always my biggest fan on TH-cam. I’m sure he’s still watching.
As you know, Dad is in a much better place and looks forward to watching you on and off the camera. Great to see that you are taking the plunge- congrats! You had a glow at the start of the video like you were recharged and raring to go! Fantastic to see you back and great to see your sweetheart at the end, man! We'll all have a better 2021

Mike, I haven't watched the video yet. I'm sure it's amazing like everything that you cook. My condolences for the loss of your Dad! I lost both of my parents 22 days apart in 2014. For me, I'll never get over it. Thanks to a lot of counseling and the passage of time I have learned to live with it. Today, when I see one of my Mother's paintings, a picture of my parents, or just think of them, I smile. I was blessed to have the best parents in the world. Take your time to grieve and keep cooking brother. We need you.

@@EverydayBBQ Mike, I watched the video and I will do my best to griddle up some onion burgers like yours. The stages of grief are nasty and non-linear. I recommend grief counseling...it doesn't take a lot of time and talking to a professional can be quite helpful. I've said a prayer for you and your family...my prayers get answered a lot so that's a thing.
Growing up in Oklahoma and working in a couple of burger joints as a teenager, plus eating in a couple million more, I believe you have done a pretty creditable job. We were taught to place the sliced onions in a clean dishrag and wring out much of the water prior to tossing them on the grill, though. It helps with caramelization.

So sorry to hear about your Dad. I know what it is like as I lost mine in 2014, so it is hard to do things like this. Now I think that it was a great idea and I saw an episode of Man v Food that covered this recipe and I think that it featured Sids Diner in it.

I'm so sorry you lost your dad, and somehow your video's got lost on youtube, SO glad to have found them again. Around the same time as you lost your dad I lost my oldest brother (52) to covid19. It was a very tough time but so many people have been there for me and my family, that sure helped. I still miss him every day, but the sharp edges are gone. Went to the movies with my other brother yesterday and he said, I'm sure Jeroen wouldn't want us to stop enjoying life, and I agree. So that's what we are doing. Trying to get the most out of life. I'm gonna go to your page now and see what you've been doing since this video. It is kinda weird youtube didn't show your video's, I am subscribed to the channel. Ah well.
