ED, when you are installing a waterblock on a gpu, ALWAYS use the thermal pads that come with the waterblock. They may be different thickness than the ones that came with the card. If you don't use the proper thermal pads you may not get good contact between the water block and the card.

So, you got the PCs mixed up there in the beginning. The right side is the video PC and the one on the left is the gaming PC. You can tell, because of how many RAM chips on each board. Intel only has 4 chips and the AMD has 8 chips.
You really should consider cooling the back memory chips on the 3090. EK makes an active backplate. Your card will still be limited if you overclock it at all with the current set up. Also, with such thick rads, you're not going to get great cooling performance unless you have a push-pull fan config on either side of the radiator. Essentially, the air that's passing through will heat up about halfway through its passage of the radiator fins so the bottom portion will still be very warm and won't actively cool your PC. At that point your better off with air cooling.
There is a reason why the thermal paste on the GPU is so clay like. It’s so the graphics card can last longer, but you do what you want to since it’s your PC.
He didn't put a thermal pad on the main VRM, also the stock thermal pads that he left on the VRAM are way too thick for the EK water block - they are supposed to be 1mm. Also EK supplies pretty shitty 3W/mK thermal pads, i swapped them for Gelids 12W/mK and decreased VRAM temps during mining by another 15C to about 60-68C depending on coolant temperature.
Nice build so far! I have two of the same EK 480 XE series rads in my build as well. Just a helpful tip, if you have not already flushed out the radiators you are keeping in your build yet, I would highly recommend it. Even though EK says that they a clean and ready to install, I flushed mine before installing them and had a lot of flux and waste left over from the manufacturing process. Anyway, just a tip if you don't want that winding up inside your loop.

Bracket for the distro plate should be fine to go between the rad and fans. That’ll give you the clearance you need
