My social worker sometimes brings me vegetables from her garden to encourage me to cook. She brought a head of cauliflower last time. I made this recipe, it was sooooo good!
I am rediscovering your work and am so happy about this. Amazing young Chef as well and a very tempting recipe. I must be one of the very few people who did not know that cauliflower could be so glamorous. I mean, this could be served both as comfort food and at a formal dinner party.
Cauliflower au gratin was my favorite cooked veg as a young child, along with baked carrots, and French cut green beans with toasted almonds in 2nd and 3rd place.
This was an excellent dish. I made it for dinner this evening and it was lovely. This has radically altered the way I make cauliflower gratin henceforth. There's just no need for all that extra dairy fat with this recipe. Frankly, I can see this technique being adapted for other gratins as well.
Excellent...some of this crossed my mind the trick and key being steam the stems and puree them. Along with steaming the florets. This will solve my issues. Though I plan on a touch of sour cream and some Pepper Jack.
You cook the cauliflower by adding one head to a pot and cover with cold water. Boil water and let it boil for a minute. Then remove and draincauliflower. Rest it on a plate. After a while, the residual heat has cooked it.
I just made this, with two heads of cauliflower, and it came out quite tasty, but it took more than double the cook time. 25 minutes to steam the florets, and then an additional 15 to cook the stems, and 25 in the oven. That said, it was very tasty.
This recipe looks delicious! I always love cauliflower to start with, I am going to do this recipe next I'm so looking forward to trying it. Much easier to do and not too fat either. The first time seeing Tim, he looks right out of high school, which is funny since he must have studied before joining "America's Test Kitchen" I love Julia she is such a great lady and she loves tasting all kind of foods.
Okay . . . I had somewhat given up on my attempts to 'like' cauliflower. However, you have influenced me with this recipe and I will definitely try this one. Thank you!
That actually looks like a delicious Cauliflower Gratin and much lighter than my old fashioned Cheesy one. As l watched this video l couldn’t help but wonder... How old is that young man? Seriously, Tim looked like he was still in High School! I genuinely enjoyed watching him though, l don’t recall ever seeing him before on ATK. ♥️👍🏼👏🏼👏🏼👏🏼
I definitely would love trying your recipe but am not familiar with all of the ingredients. Please send me a list and I'll do some adventure finding them. Thank.
Thank, God, I know how to cook. I’ll be using my Vitamix to lessen the dirty pots & later for the Parm & Panko to be replaced by aged Cheddar & oven toasted fresh bread crumb topping with garlic, olive oil & Irish butter. Thanksgiving comes but once a year. My White Cheddar will be great on my orange cauliflower!
Joey Mama, This recipe is very nice, but sometimes you want something richer with more body. I love Ina's recipe, I make it nearly every major holiday. Chef John from the FoodWishes YT channel also has a great gratin recipe.
This looks so good, and this was a great segment. I'd love to see just a few tweaks to make it low carb though...it's pretty close already, maybe a different crunchy topping?
I love watching American kitchen. The food look so good it make me want to eat or taste what they are Presenting to the WORLD of PEOPLE . I especially enjoy ALL The hosts, they make the kitchen Show so down home. I love watching the show .
Where did you order that baking dish? I believed i got it from one of your episodes and I loved it however I dropped it and broke it and have not been able to find a replacement. If you can assist me I would love to replace it. Love your channel thank you for all the good food that I serve to my family
I think half the battle is learning how to cut that cauliflower head properly as it can get quite messing and frustrating. Tim did a very helpful demo here!
I'm very excited to find this reasonably simple recipe that takes our pal the bland cauliflower (educated or not) and makes it into a yummy dish. That sauce also has me wondering about a soup ...
Using one head of cauliflower for the sauce to add over broccoli would be delicious! (Only have one head of caulk but plenty of broccoli so I'm doing that.)
I finally broke down and bought the Plant-based cookbook but was very disappointed to see the cauliflower gratin missing :(. Any chance of a volume 2 sometime in the future??
I love this recipe and I know it's going to become one of my new favorites! How can I turn this into a creamy delicious soup, or even a layered lasagna Tim?
That was nice, but i still to make the trad cheese sauce! And i diced& cook some Onion& celery which i mix in wity the sauce, then it goes over the Cauli& then bake..But like a Mac& cheese sauce,it's versatile so u can to it,whatever suits.( like with the cheese sauce,i add some Worcester Sauce& a shot of Hot sauce)
That REALLY looks GREAT. I will make it but I think I will add a couple of crumbled bacon strips to the base. Can't go wrong with the "devine swine"! !! !!!
I accidentally made this without the cornstarch and it still came out really good. I missed that part when writing the recipe down lol. You could probably also add a little bit of flour whisked into some of the puree as well.
Poindexter is wrong about blending hot liquids. You take out the plug in the lid, cover with a towel and be careful. By sealing it tight as he said will cause and explosion or a steam burn which is the worst kind.
Tim is a star in the making, totally natural and saying just enough
THIS
The young man did such a good job of explaining the recipe. 👏 👏
My social worker sometimes brings me vegetables from her garden to encourage me to cook. She brought a head of cauliflower last time. I made this recipe, it was sooooo good!
I love these folks. They are like cooking with family.
You should have him in more videos!! He did an awesome job!!
Make more cooking video of Tim. Please and thank you.
Tim and Julia are great together. More Tim and Julia please.
This thoughtful young man is a really good presenter.
Soo good! Soo good!
Good that you used the stems to make sauce instead of loading up on flour.. Thanks 💗

The sauce is amazing! Thank you! I wonder if I could substitute it in other dishes like scalloped potatoes?
I tried this recipe and it’s delicious. Give it a try and you will love it.
Excellent casserole!
I tried this today!
I would like to see more of Tim's recipes!

Excellent hearty meal, so healthy

Tim is wonderful
Made it for dinner last night and everyone enjoyed it!
Thank you for such an informative recipe.
I love the recipe but I like the young, fresh chef bringing his expertise to the kitchen more!
Looks scrumptious.!
Awesome 😊😊😊thanks for sharing
I definitely will make this. 😊

This is one of my favorite recipes! It’s so good!
Very good motivation!
That looks great! Good job young man.
Love cauliflower, loved the dish, thank you!
Beyond the yummy-looking recipe, this video was full of great information and tips. Thank you!

Nice treatment. Good job!
As always looks fabulous!

Looks fantastic 👌! Now lets have Julia's classic full fat recipe!! I like how Julia says cauliflower correctly.

Looks incredible. I'll definitely be trying this out for soon.👍
The kid's reaction to the Mark Twain quote was hilarious.
Labor Days I totally imagined Michael Cera/George Michael reacting like that.
I’m surprised he knew who Twain was!
Can we get a link to the old gratin recipie (or the book it is found in)? That one sounded great too!
Here's the one you actually want to make: barefootcontessa.com/recipes/cauliflower-gratin :)

I like Ina's but should we assume from your tone that the other one is actually not good?

Pork rinds crushed. And up the FAT!
Or crispy bacon
I make my own bread crumbs using keto bread

Show so down home. I love watching the show .
The chef she's working with is so awesome.
This recipe surprises me. I may try it but I would have thought there would be some onion in it. More than just the chive garnish at the end.
2,years ago ‼️. I bet that young man has turned into a very handsome Man !! He is so very polite. Thank you for sharing from 2 yearsago .
Can’t wait to try this dish!
Julia calls it "gra-TOHN". Tim calls it "grah-tan". I'm in the Tim camp.
Thanks Tim for pronouncing gratin closer to the French way.
I really like cauliflower, deep fried, soup, etc... a delicious veggie
I need to make this!
More Tim!
Thank You Julia and Tim O:)
... but it looks so good poured over the flowerettes idk if mine will make it to the oven O:)
I love Panko. It's my go to bread crumb.
Looks yummy will try tomorrow 👍🏻
What kind of baking dish is that? Looks delicious ❤️

Never seen this kid before wonderful personality. Glad he’s at ATK.
He graduated from the ATK Kids show iirc.
Tim's no longer hosting.
Dave Jones still trying to learn who is who at ATK. I recently started following on TH-cam. Didn’t know that. Thanks!!!!
He's good - would love to see more of him.
super recipe
I'm very excited to find this reasonably simple recipe that takes our pal the bland cauliflower (educated or not) and makes it into a yummy dish. That sauce also has me wondering about a soup ...
Dan did a cauliflower bit and I believe it included soup.
Thank s

I got a big presentation tomorrow but I am watching a cauliflower video on TH-cam. fml
Priorities 😗
You should have made this recipe and brought it to the meeting! Winner!
great guy!!
Can I use an immersion blender instead of a regular blender?
WE STAN THE NEW GUY
This looks amazing, but I don't think that I could resist a little sharp cheddar cheese before the final crispy layer!🧀🤣
Thanks for the suggestion. I'll try it both ways.
How did that work out? Did it just send over the edge?
The voice of reason!
And garlic! Or onion! At least chives?
Ooohh, but sooo wonderful w/ that parmesan!
I personally would delete the nutmeg.
I finally broke down and bought the Plant-based cookbook but was very disappointed to see the cauliflower gratin missing :(. Any chance of a volume 2 sometime in the future??
I miss Tim!!!
I love this recipe and I know it's going to become one of my new favorites! How can I turn this into a creamy delicious soup, or even a layered lasagna Tim?
Their cauliflower soup recipe is similar, using cauliflower for the sauce.
That was nice, but i still to make the trad cheese sauce! Great Keto recipe.
Bettylou
Without the panko or the starch.
@@13bm90
Yup, cook down some some heavy cream or add cream cheese, etc. It's just use the grated parmesan on top.
Tim should have his own show
I'd switch out the parmigiano with some gruyere I think. Either way this looks really good.
Hi 👋 Tim!
Yummy!
Oh wow! I really like this recipe a lot!! Now I know what to do with all those bags of frozen cauliflower :)
You shouldnt use frozen
@@stefanandersen7726 why not? you might have to make some slight modifications, but it should still be yummy!
sounds great!
I came for the recipe, but stayed for Tim.
How about using frozen cauliflower?
Relatively
This is exactly how I make my broccoli cheese and or cauliflower cheese soup I just blend the broccoli and it makes it take instead of using cream
Aww, sorry Tim. Wish we had gotten a chance to know you better. I'll think of you whenever I eat your cauliflower dish!
What happened to Tim? He was great!

I accidentally made this without the cornstarch and it still came out really good. I missed that part when writing the recipe down lol. You could probably also add a little bit of flour whisked into some of the puree as well.
I made it 2 hours ago....excellent. but savagely consumed. 🦖💨

Who is that cutie!?! More youngsters!
Very nice claw hand
What do you do with it?
