Thank you so much! I made captain crunch french toast this morning and couldn't figure out why my sugar wasn't caramelizing until I realized I was using raw sugar not refined and began to search out another way to make it without the sugar I had:)
Ingredients:
100g (1/2 cup, 3.5 oz) unsalted butter
200g (1 cup well packed) brown sugar
235 ml (1 cup) heavy cream
5 ml (1 tsp) vanilla
1/4 tsp salt

Ok, so I saved this recipe to my favorites some time ago but never actually made it. I did however make 2 other caramel recipes, one that uses water in the sugar and one that uses no water, just a Hella lot of stirring and waiting for the sugar to melt. Tonight I made this one and I don't k now what by took me so long 😮! It's super easy and the taste is amazing!! This will be my quick go to recipe for delicious homemade caramel sauce. And I like brown sugar much better anyway 😋

Ok I made the sauce....excellent. Pour in milk instead of cream. Do not want to go out due to the lock down. I made milk with 4 Tbsp powder of Nido so had a bit heavier milk. Cooked a little longer to coat the back of the spoon. Drizzled on sticky date cake.....thank you for such an easy recipe

This was the best and most easy recipe i found for caramel sauce. The only two things i did different was that i used half and half brown and white sugar, and added a dusting of cinnamon in the end, it was great.

I made this and it worked really well i used alpine evaporated milk though because there's no heavy cream in th ph it worked fine, but i added too much salt because i was testing when it was still warm when i put it in the fridge it got salty

I don’t want to have wasted all those ingredients...
I tried this yesterday. And while it is very easy to make and fool proof, I went into it expecting caramel. It is delicious, but it isn't caramel. It is brown sugar butter sauce, which tastes good if you like brown sugar, and I will definitely use it, but don't go into this thinking you're making caramel.

Can you use anything else instead of 35 percent cream, and can you use sugar instead of brown sugar or something else as a substitute?
you can replace the cream with evaporated milk. but it won't be as creamy as it doesn't have as much fat in it. but you could always double the ammount or something and reduce theliquid by cooking it longer but you have to keep an eye on it so it doesn't turn bitter.
using regular sugar is fine, but you will need to careful with the caramelizing process to get the same color and flavour without burning the sugar.

Thicken the milk by adding 1-2 tbsp lemon juice or vinegar to a litre of milk, that's how to make buttermilk. Once the watery liquid (whey) separates, you can mix the heavy cream to your sugar caramel.

Oh no, never use margarine. Its wildly inflammatory and should have never been recommended over butter.

Hi! I made this in the hopes of putting on top of my shortbread to create a millionaire's shortbread. Just wondering if it will "settle" if I put it in the freezer so I can pour melted chocolate on top? (Also, I followed a recipe for millionaire's shortbread but the caramel I made got super hard like candy 😔)
I have that problem too.... I'm going to try this recipe and make sure to keep the heat lower and I think adding butter first is key. Did you use real butter?
It’s possible that your cooking times were off. If you cook the mixture too much, it can harden like toffee. Tasty, but not for dipping or drizzling.

Is this really a recipe for a caramel sauce? When did the caramelization happen? It's a brown sugar so it paints everything brown but that's not a caramel.
It is browned by "Maillard reaction" not caramelisation, a different tecnique for browning. You get the same result with white sugar, its a chemical reaction between proteins , carbohydrates and heat.

went out and bought a bag of caramel squares to melt, then came across this video. I made this recipe and it came out amazing. Tastes so good. Never knew it was so easy. Since had the caramel squares already threw a couple in to melt. Hopefully when I use the sauce later today to make my homemade salted caramel ice cream it leaves caramel streaks throughout the ice cream. Great vid, straight to the point no bs. You get two of these 👍🏿 when I get my levo 2 I'm making this with infused butter and sugar 🤯🤯
