    Famous Tawa Fish Fry Written Recipe With Directions:
    Ingredients for marination:
    -Fish (Machli) fillets 3 kg
    -Carom seeds (ajwain) 1 tbs
    -Lahori Salt (namak) 1½ tbs
    -Coriander seeds (sabut dhania) 2 tbs
    -Fennel seeds (sonf) 1 tbs
    -Cumin seeds (safiad zeera) 1 tbs
    -Fish Masala 1 tsp
    -Salt (namak) ½ tbs
    -Tumeric (haldi) powder 1 tsp
    -Carom seeds (ajwain) 1 tbs
    -Red chilli (lal mirch) powder 1 tbs
    -Red chilli flakes (adh khutti lal mirch) 2 tbs
    -Dried coriander (khushk dhania) powder 1½ tbs
    -Gram flour (besan) sifted 4 tbs
    -Tamarind pulp (Imli 2 tbs soaked in ½ cup hot water for 1 hour)
    -Lemon (nimbu) juice 2 tbs
    -Garlic (lehsan) cloves 8 chopped
    -Mustard oil (Sarson ka Tel) for frying
    Ingredients for Chutney:
    -Dried Apricot (Khushk Khubani) without seeds 100 g soaked in hot water overnight
    -Tamarind (imli) 50 g soaked in hot water overnight
    -Sugar (cheeni) 2 tbs
    -Black salt (kala namak) 2 pinch
    -Red chilli (lal mirch) powder ½ tsp
    -Salt (namak) ½ tsp
    -Red chilli flakes (adh khutti lal mirch) 2 tsp
    -Water (pani) ½ cup
    Directions for Fish:
    -In a grinder, add carom seeds and salt and grind it.
    -In a tray, add fish and apply the carom seeds and salt powder on it. Left it for half an hour.
    -After that, wash it properly with water, then strain all the water from it until it dry.
    -In a pan, add coriander seeds, fennel seeds, and cumin seeds and dry roast them. Bring them out to a grinder and slightly grind them (don't make powder).
    -In a bowl, add the prepared ground and roasted spices, fish masala, salt, turmeric powder, carom seeds, red chili powder, red chili flakes, dried coriander powder, gram flour, tamarind pulp, lemon juice, and garlic. Mix well.
    -Add 2 tbs of water if required and mix well to form a thick batter.
    -Add fish fillets and coat well, cover, and marinate overnight. Keep it in the refrigerator.
    -on a griddle, add mustard oil and heat it on medium flame (medium-low flame commercial stove).
    -Shallow fry the marinated fish fillets for 5 minutes. Make sure that the skin of the fish fillet is on the upper side.
    -After 5 minutes, change the side of the fish fillet. Total frying time: 12-13 minutes.
    -Bring it out to a dish and garnish with mixed vegetables.
    -Serve with prepared chutney and enjoy.
    Directions for Chutney:
    -In a juicer, add dried apricot with water and tamarind pulp, sugar, black salt, red chili powder, and salt. Blend it.
    -In a pan, add the prepared mixture, red chili flakes, and water. Mix well and cook it on medium-low flame for 7-8 minutes.
    -Bring it out to a bowl and let it cool.
    Tips and Tricks:
    -If the salt is already applied to the fish, then don't apply carom seeds and salt to it.
