I would love to find someone who cooks enchiladas the same as in Mexico my ex his sister would make them with a piece of chicken on the side also I want them so bad I believe the filling was potatoes they were delicious!!!!!!
Your recipe makes A LOT of tacos. I cut the recipe in half and still made enough for 4+ dozen. Also need to note- careful with adding too much water and bean juice. Want to keep the filling thick. I had to simmer uncovered for 30 mins.
