  • Hello Everyone! Today I'm making a copycat version of the Barbados (Bajan) Chefette Roti. It is made with a West Indian flat known as roti skins and a filling of curried meats of your choice with or without potato with a selection of different Indian spices.     RECIPE:
    2 LARGE CHICKEN BREAST (BONELESS)
    2-3 LARGE IRISH POTATOES (PEEL, WASH AND CUT IN QUARTERS)
    COCONUT OIL (FOR COOKING)
    PURE CREAMED COCONUT (TABLESPOON)
    BAY LEAF
    KNORR CHICKEN CUBE (TO TASTE)
    GREEN ONIONS (CHOPPED)
    FRESH THYME TO TASTE (CHOPPED FINELY)
    2 CUPS WATER/CHICKEN STOCK
    SPICES
    2/3 - 3/4 CUP CURRY POWDER
    1/2 TBSPN TUMERIC
    1/2 TBSPN GARAM MASALA
    1/2 TBSPN GERA
    1/2 TSPN ALL SPICE
    FRESHLY GROUND BLACK PEPPER (TO TASTE)
    1/2 TBSPN ONION POWDER
    1/2 TBSPN GARLIC POWDER
    1/2 TBSPN ADOBO
    DIRECTIONS
    WASH CHICKEN WITH LEMON JUICE AND SALT, PAT DRY AND CUT INTO BITE SIZE PIECES.
    PLACE IN A BOWL AND ADD ALL THE ABOVE SPICES, MIX TO WELL COMBINE AND MARINATE OVERNIGHT IN REFRIGERATOR.
    HEAT PAN OVER LOW/MEDIUM HEAT, ADD THE COCONUT OIL, CREAMED COCONUT AND A BAYLEAF.
    SAUTEE THE MEAT FOR 5 MINUTES STIRRING CONSTANTLY TO PREVENT STICKING.
    TURN THE HEAT DOWN TO LOW, COVER THE POT AND LET SIMMER IN IT’S OWN JUICES FOR 15 MINUTES.
    ADD THE POTATOES AND WATER OR CHICKEN STOCK, COVER AND LET SIMMER ON LOW UNTIL THE MEAT IS COOKED THROUGH AND THE POTATOES ARE TENDER.
    PARATHA/OIL ROTI
    INGREDIENTS
    2 CUPS AP FLOUR
    1/4 TSPN BAKING POWDER
    WATER
    EXTRA FLOUR
    COOKING OIL
    1 TBSPN SALTED BUTTER
    PASTRY BRUST
    ROLLING PIN
    DIRECTIONS
    IN A MIXING BOWL, MIX THE FLOUR AND BAKING POWDER TO WELL COMBINE.
    POUR ING THE WATER GRADUALLY AND KNEAD THE DOUGH TO A SOFT AND SLIGHTLY STICKY CONSISTENCY.
    ROLL OUT ON YOUR WORK SURFACE AND DIVIDE THE DOUGH INTO 4 OR 5 DOUGH BALLS.
    ROLL OUT EACH DOUGH BALL IN AN OBLONG SHAPE, BRUSH WITH THE OIL AND BUTTER MIX AND SPRINKLE SOME FLOUR OVER THE OIL; SLIT FROM TOP TO HALF WAY DOWN THE CENTER.
    TAKE THE RIGHT END AND FOLD BACK TO THE OTHER END AND TUCK ENDS DOWN THE CENTER; IT IS GOING TO LOOK LIKE A CONE, USING YOUR INDEX FINGER PUSH DOWN FROM TOP ALL THE WAY DOWN AND FLATTEN WITH THE PALM OF YOUR HAND.
    COVER WITH PLASTIC WRAP AND REPEAT UNTIL ALL IS DONE. LET SIT FOR 15-20 MINUTES.
    HEAT THE TAWA AND ROLL OUT EACH INTO A CIRCLE AND PLACE ON THE GRIDDLE.
    WHEN YOU START TO SEE BUBBLES, FLIP THE ROTI OVER AND BRUSH WITH THE OIL AND BUTTER MIXTURE.
    FLIP AGAIN AND REPEAT.
    THE ROTI SHOULD TAKE ABOUT A MINUTE AND A HALF TO COOK.
    REPEAT UNTIL ALL THE DOUGH BALLS ARE DONE.
    CLAP OR SHAKE THE ROTI IN A COVERED BOWL.

    I'm 🇺🇸🇬🇩🇻🇨 when ever we take a trip to vincy we have to stop to go from Barbados to st Vincent and I get chefettes all the time

    one question Paulette? I am looking to buy a roti tower what size should i get a 30cm or 33cm? and what size and how tin/tick is your roti skins ?

      Hello Randolph, if you can get bigger than 33cm then I would suggest get a bigger one; if not that should be fine just roll them out shy of the tawa; you don't want the dough to be over the tawa. It is important that the edges are within that space. Great idea to purchase one and the proper name is a "roti tawa or griddle" Good luck. Xo

    Hi Paulette. It's Dee from long island! When i saw you using the Chicken breast i was like no! It's going to be dry and tough. That has been my experience with curried chicken breast (not mine!) from restaurants. I love the way your roti looks. So guess what I'm cooking for dinner??? Altho i don't have any chadon bene or scallions - darn it - shrimp roti tonight! One thing, which curry powder do u use? My husband and i are finding curry powder doesn't have they zing anymore. I used Chief and Indi madras for years. Very blah. We only like the trini curry. No amount of green sauce or gheera making it better. Help!

      Hello Dee!!! Well my dear, Chief has always been my favorite but you have to use the other spices that I listed; I kid you not, everything was so perfect and I assure you it was the best curry I have every made and better than Chefette. The cream coconut and the knorr cubes gives it that extra flavor as well. Try it exactly how I did it and you will see, just watch the spices for the salt.       @@deediane8874 Hi Dee, I hope I wasn't too late but I am happy it came out good and you enjoyed it; just a little tip for next time, when you are cooking curry shrimp you need to cook the curry on low heat making sure not to burn and stirring constantly then add some coconut milk and simmer to the right consistency before adding the shrimp.     I have never heard of a tower before. Why do you have to shake the roti?

      Lol, it is called a "Tawa' It is just a griddle to cook the roti skins on. And shaking or clapping is just to give them another texture by creating layers of flakiness. Thanks again my Friend. Xo

      You are very welcome!! Sounds good but you have to keep in mind that you have to make the skin smaller than the inner perimeter of your frying pan so that your ends can cook properly; very important. Thanks for being patient and God's speed. Xo

      Randolph welch Hello Randolph, you really don’t have to, that’s just giving it another texture to show the different layers of flakiness, that’s all.

      Oooh I meant to say, you need to find a Caribbean Restaurant in your area that sells Rotis and ask for a beef/chicken and potato dhal puri roti or regular without the peas but fyi, the peas which is the dhal puri is better. Xo

    Yes who needs Chefeete when you can make your own! Your roti skin looks really good and that curry looks delicious. You are not as far as Barbados I may have to take a flight up to you for some samples. Another good job done my friend

    Nice roti skin. A Guyanese friend gave me a roti iron many years ago and it got thrown out inside my oven when we did the repairs to the house after Hurricanes Irma and Maria. I love making roti skin but I have not done it in a long time. Thanks for sharing 👏

    Amazing, Chef Paulette. Wow, the curry chicken look so delicious. The roti is perfect. I know if I tried making the roti I would end up with a hot mess. You have a gift for cooking. I do not. Hubby loves anything with curry. Maybe he will try your recipe. Your kitchen must smell really great right about now. Curry has a very distinguished smell.       I tried the curry recipe and yes it does taste like the curry in a roti. I used burrito wraps instead of making the actual roti and it still came out very good

      Hey Cuz, you really need to have the right pan, if not you have to make them really small so that your ends cook and roll them out thin, if they are too thick, it is going to be a mess; hope those tips help. Thanks so much for watching, I appreciate it. Xoxo

    Wow! Harold and I both think this looks delicious. I think the roti part is out of my league, but I can certainly give the chicken a try. Since Harold knows my limitations, he suggested I try store bought tortillas - yes, I laughed AT him.
