It's called masking fluid. You put it down where you want the area to stay the original colour, and it peels off really nicely once its dry

the oranges painting is using watercolor meaning that it will generally spread quite a bit and that's not only why the lines are not perfect plus its the style and the bit where the paint would not go over is masking fluid and is commonly used in watercolor paintings as it is hard to get the detail in if you don't do, overall it showed a lot of skill compared to some other paintings as it takes a lot to control watercolor but anyway good video will :)
obviously its not the Mona Lisa or as skilled as that but its not trying to be , its trying to be "satisfying" in some way (idk how)

The water in the last one is so clear because it’s being naturally filtered out. (: Groundwater is naturally filtered as it goes through layers of soil and rock. Digging a small well like that, or one near a riverbank, will give clear water that’s probably got more minerals in it than surface water.

As an artist, the watercolour citrus painting was actually very beautiful and definitely satisfied me. They don't know what they're talking about when they're talking about the art, that's just watercolour. I can't do watercolour myself, though.
