Pour the cheese into the cloth-lined strainer draw up the corners of the cloth and tie them together in the center. Put a small plate on top of the wrapped cheese ball in the strainer and place a can of soup or something to weigh it down. The pressure will take out more whey and the cheese will be firmer. You can do this with yogurt as well to make yogurt cheese!
