Laura, you really made me cry - i a good way - cause I know, how much I will miss my "nana" ( bosnian for nonna) one day....

      I agree, Laura is an inspiration in many many ways. ignore all the ball breath comments. it's absolutely ridiculous that someone would take the time out of their daily schedule to insult such a beautiful lady inside and out.     Laura I think it's wonderful how you always mention your nonna. I wish my nonna was still around. Thats how Italians are we love our families and food is a big connection for us. Your Nonna's leg of lamb recipe is fabulous. Keep doing what your doing. Happy Easter to you, Joe and your nonna.

    This is the Easter dish of my childhood. Roast lamb, Pasteria, and the meat pie (which I can't remember the name of in Italian). It always felt like we were eating all of the meat we couldn't have during Lent in that one HUGE meal. Happy Easter Laura & Joe!

    For Easter we eat goat more than lamb but it's cooked very similar to this. We also eat it for Christmas day with roasted potatoes and rice. Yumm

    Why is it so bad that she sees her nona as an inspiration ? We all have role models, super heroes people that we look up too and laura looks up to her grandmother . There is absolutely nothing wrong with that. If you dont like it than dont watch it.

      I baked it in the oven. I started off with it uncovered and I kept a close watch on it, when I saw it was getting a nice caramelized top, I covered it.

    I love garlic and rosemary roast lamb, slow cooked lamb shanks in red wine and my lamb chops with mint sauce!!

    Looks wonderful, and I would totally make it the same way with the garlic and rosemary. At the end however when you drained off all the fat, there was tons of flavor still in that. I would place all those drippings in a fat separator cup add the wine or a little water to that and then pour all those amazing juices back into the pan after it settled and separated. I love leg of lamb, this brought back so many child hood memories for me.

    I've tried this today .. Amazing !:) your grandmother is a Genius :P everyone loved it, it was Great for christmas day :) thank you ! And if anyone is wondering, I cooked my leg for 65 min. 15 min per 500g plus extra 10 min. And it was Perfect!

    We do the same with the lamb, with the rosemary and garlic, but we leave the lamb in the pan without a rack and put a little water and lots of onion and carrots and baste the lamb with the water/drippings every 20-30 minutes. Then we make the sauce out of the drippings.

    Would you please make a video showing how to make Gaufres de liege? They're the Belgian waffels made with hard dough rather than the "liquid" one that you already showed..they're so amazing! I can't find a good recipie online.. We all love your recipies at home! Hope you will pubblish a book one day..I would swim from Italy to USA to have it! :P

    Hey Laura, If you pop the bowl in the fridge for a few hours, the fat will solidify on the surface which you can scoop right out and you'll be left with meat juices at the bottom. :)

    Funny Laura this is exactly how my Papa (from Bari) makes a beef roast! Whenever we make a leg of lamb we use rosemary and red wine, and make a vinegar & mint sauce for the top. So delicious.

    I find that injecting the leg of lamb works rather well, since it is such a big piece of meat, you gain a layer of flavor with the rub and plug, but you get that extra kick of another flavor on the inner portion. Regardless, this looks absolutely amazing! Where in the world did my invite go to?

    thanks for the tip about the lemon juice to cut the strong flavor of lamb. the smell of lamb can bother some people - or even animals! i had a dog that used to freak out when we cooked lamb! he just didn't like the smell!
    btw, i like thicker gravy rather than the thin juices you make, laura. so for me, i'd have left a lot of the fat, added some flour to make a roux, then added the wine and some water to make a nice thick gravy.
    (gravy is easy if you know how, so many people don't make it for fear of lumps, but it's the same thing as a roux... no lumps!)
