Process number 1 is the answer I was looking for! I had played around with a couple ideas you didn't demonstrate, such as the 2 blocks with a bridging block to hold up the pallet by a single board at a time near the stringer, then pound down on the stringer to pop the board free, but your process does the same thing a lot easier. On the end pieces directly above each other, one thing you can try is to get a couple of the stringers and attach them with a 3" construction screw (or bolt, as you prefer), about 6" from the end. Then just insert this end between the two boards and pull the long ends apart like handles, scissoring them apart on the screw. The screw acts as a pivot to concentrate the force of your pulling on the longer handles into the shorter jaws, which open up and spread the boards apart until one of them pops free. Once you remove one board this way, use Process number 1 to pound out the other.
Oh, and for de-nailing, one idea I saw on another channel (sorry, didn't save which one) is to find a 3" pipe nipple as small a diameter as they have, and a bolt that fits nearly exactly inside of it. Use a drill to make a depression in the end of the bolt, to center the point of the nail. Then just position the nipple over the nail, put in the bolt, and pound. This prevents bending, and makes hammering them out a lot easier. (NOTE: Keep your thumb and finger away from the end where the bolt's threads are sliding into the nipple, as your pounding can quickly scuff off your finger skin as it's pulled in by the bolt's threads.)
