Greetings, I am a chef by trade, and was trying some new recipes for making an Italian beef for an event I am catering. This particular selection, was the one I found to be the most useful. I did make some modifications, I found to be improvements. I basted the pieces of beef in olive oil, and used some of the seasonings directly on the meat to form a good crust with the sear - similar to how you would prepare a steak. I also added a few Tablespoons of brown sugar, to balance the heat. Also, if you’d like to have the flavor of the herbs come through more with the gravy, try using fresh oregano and basil instead of dried. Thank you for your recipe. Already subscribed. Cheers.
Glad to see you using pepperocinis- the magic ingredient most people don't use. I prefer to cook a couple of hours then put in the fridge overnight (sort of a marinade). Then the next morning slow cook it 8 hours or so and have it ready for dinner that evening. Like you I also shred and let sit in the juice a while before serving. I prefer to use bell peppers and onions and I cook them with the meat. I also add mushrooms (my wife loves them with it). Good stuff. We use Turano french rolls, just like the beef places in Chi Town. Turano was designed for Italian beef. They hold up to the juice overload, but are remain tender.
That is a great recipe. Ive tried adding a couple of things to it and it brightens up the whole mixture. Ive added a AU JUS packet and an Italian salad dressing packet to the slow cooker, BOOM! :) I also make a relish out of some giardiniera for the topping by tossing some in my food processor for a few seconds.

I have a love/hate relationship with the crock pot whole house smells also. What I do is place the crockpot on the stove top, making sure the itty bitty air hole in the crockpot lid is directly under the exhaust vent. Turn the vent on low to med and then go to bed or about your day. I then turn it on high when needing to lift the lid. Keeps the house smells to a nicer level. Happy cooking y’all!
Looks and sounds delicious! I was thinking that if the hoagie bread was toasted and then garlic butter that you could put on the bread then put the meat and cheese and then broil it for a couple of minutes, that would maybe help with the sogginess. Just a suggestion. Thanks for sharing.
Shared this vid with my Dad. He gave it a huge thumbs up. My folks are coming to visit this weekend and we are totally making this overnight Sunday so the whole family can enjoy the Glorious Beef on Monday afternoon while we watch the Illini in their first bowl game since 2014.
If you want to thin slice it, slow cook for 6 hours and then chill the slab a little. Then return to the pot after slicing. I put Good Seasons Italian Dressing mix, 1medium onion and 3 Serrano peppers. Johnnie’s puts 2TBSP of paprika. I did Chuck, rump, top sirloin and Tri Tip. Also put the sweet peppers in the Au Jus for the last hour.

@southern daze All Italian Beef served in Chicago is thin-sliced--ALL--Al's, Johnnie's, Portillo's, etc. Thin slicing ensures that most of the beef surface area is flavored.
@@Charlie-qe6lv Definitely not standard to shred, but most home cooks don't have a deli slicer. You can put the cooked roast in the fridge for a few hours and then, if you have one, use a mandolin to thinly slice. Works really well.
Hmm, I make these at least once a year. Yet I've made them in the Instant Pot. Also, I added some tomato paste to the broth. I lived in an Italian neighborhood & the company my father worked for would have these for the folks that attended the summer party. Also, I use some celery.

I have generally been disappointed with the quality. I had different ideas for dinner time today, but decided on a Chicago Style Italian Beef Sandwich instead. I have no idea how authentic this is, but I think it has italian seasoning, Giardiniara and slow cooked It is close enough for me. My chuck roast is seasoned and cooking with roasted peppers, garlic and onions in the oven now at 250°. Forgot to add the Giardiniara. I agree, the first bite is needed, but the second bite confirms, yea this is a great sandwich. Nice cook. Happy Holidays.
It’s not necessarily Authenentic, but it’s insanely good and the flavor profile is identical. Especially since you get the rendered fat as part of the gravy. The beef is also more succulent this way. It’s a winner.
Ohhhh man we had a small takeout joint that had Italian Beef ready to go. The old man would ask “you want it hot?” YES he would dip the meat in spicy gravy. The BEST messy sandwich I have ever eaten. The place is gone now, unfortunately he passed and no one kept it going. I sure do miss that place. I ate those sandwiches 3-4 times a week.

I watched to see if you do as I do and you do, except I do one other step. I take the meat out and shred and I take the gravy with the peppers and gardinier. I put in the blender and then put the beef back in with it. It really steps up the gravy flavor. When I make the sandwich I added sauted sweet peppers and gardinier.

Couldn't wait until Christmas to make this, went ahead and did it this weekend, everything in the crock Saturday night (11-23-19). Got it to just a slow boil and then set it on low the rest of the night until 11am today, Sunday. Needless to say, the meat was falling apart like it should. Shredded it like Mike said and then let it sit another hour, then my son and I proceeded to eat 3 sandwiches (2 for lunch, 1 for dinner) while watching football (damn Denver Broncos, Buffalo smacked them good today).This recipe is as good as advertised, Big Mike, thanks, it's as good as Italian beef gets. I did, however, go half a jar of the HOT GIARDINIERA, half jar of the mild, and half jar of the peppers for a little extra boost. ECCELLENTE!

Follow up... I've been making your recipie for almost a year and since I just started the cooker I thought of you and wanted to thank you. My wife and son (17 and an animal) literraly start twitching when I ask, "Howbout I make some Italian beef?" In my youth most of my summers were spent in Chicago creating trouble with my cousins. Shredded it like Mike said and then let it sit another hour, then my son and I proceeded to eat 3 sandwiches (2 for lunch, 1 for dinner) while watching football (damn Denver Broncos, Buffalo smacked them good today).This recipe is as good as advertised, Big Mike, thanks, it's as good as Italian beef gets. I did, however, go half a jar of the HOT GIARDINIERA, half jar of the mild, and half jar of the peppers for a little extra boost. ECCELLENTE!

Follow up... I've been making your recipie for almost a year and since I just started the cooker I thought of you and wanted to thank you. My wife and son (17 and an animal) literraly start twitching when I ask, "Howbout I make some Italian beef?" In my youth most of my summers were spent in Chicago creating trouble with my cousins. Now the wonderful smell of Italian beef is wafting through the North Georgia mountains where I now call home.

I make that often, slight difference in ingredients. We call it dripped beef. No matter what you call it, it’s delicious. Loyd and I speak in movie quotes/lines too, most folks don’t know what we’re talking about😂Thanks for sharing😃

"Beef...it’s what’s for breakfast!" Wow, that sandwich really looked...glorious! Good tip about slow cooking➡️ Turn it down to low at the end, if you’ve cooked on high, to make it more flavorful. I cook on high, and usually turn to low for a while when it’s done. But now I’ll always do this.

Lol 😂 yea it was a good breakfast! Never had it for that meal but I’d gladly do it again for sure. Slow cooking is so easy but there are some things that can be done to better the results. Nice recipe! I don’t have a slow cooker but I want to try this in a Dutch oven. Nothing beats a good hearty sandwich, or two, or three 😊
I would say this is better than most Italian beef being sold on Chicago nowadays. A lot of places are using frozen already cooked meat.
