Hey guys, for those of you wondering on nougat and the types there are actually a few different varieties used. Here's some info for you, Nougat (US pronunciation: /ˈnuːɡət/ noo-gət; UK /ˈnuːɡɑː/ noo-gaa;[1][2][3] French pronunciation: [nu.ɡa]) is a family of confections made with sugar and/or honey, roasted nuts (almonds, walnuts, pistachios, hazelnuts, and recently macadamia nuts are common), whipped egg whites, and sometimes chopped candied fruit. The consistency of nougat can be soft and chewy to hard and crunchy, and it is used in a variety of candy bars and chocolates. The word nougat comes from Occitan pan nogat (pronounced [ˈpa nuˈɣat]), seemingly from Latin panis nucatus 'nut bread', (the late colloquial Latin adjective nucatum = 'nutted, nutty'). There are three basic kinds of nougat. The first, and most common, is white nougat ("mandorlato" or "torrone" in Italy), made with beaten egg whites and honey; it appeared in Cremona, Italy in the early 15th century and in Montélimar, France, in the 18th century. The second is brown nougat ( nougatine in French) which is made without egg whites and has a firmer, often crunchy texture. I decorate cakes with homemade butter creme frosting and some cakes with fondant. Iv been watching your videos from when was 7 to know. I would like to thank you now because you are my inspiration and i want to be a baker and a chef when i grow up. Once again thank you and keep up the good work.

So I think I figured out the problem; for me anyway.. I followed your recipe for the nougat but made some adjustments. After boiling sugar water to 250 temp, I only poor have into the egg white mixture, the returned the sugar water to the stove to reach 300 degrees. Then pour remaining into the mixture which caused it to thicken after a bit of mixing. Then it became thicker, fluffy and less glossy and taffy looking. I also added in some peanut butter and mixed that together. It came out exactly like the nougat you find in a candy bar. I was rather excited sense I failed at this twice. I have a pic of the cookie bar I made, but I'm not sure how to post it here if you wanted to see it. Thanks for inspiring me to bake again. I look so forward to your tutorials every week. My daughter and I sit and watch them together over and over again! You are awesome at what you do and we hope you never stop!!

In the Philippines,our nougat is not just made of sugar,our nougat is like candy that is not that sweet,just a little sweet and it's like a nut but it's super chewy that's why I love nougat.
So my cookie turned out nothing lie yours.. I couldn't picks up the slabs like you did, they just kept breaking on me but sense its not 4th of July I figured one big white cookie would work just as well and it did; the bigger problem was the nougat. It came out soft and chewy like taffy, not fluffy like nougat. Mine sort of looked shinty though like yours. Was it suppose to be taffy in texture or fluffy like the nougats in most candy bars?
***** Try chilling the cookie dough for longer which might help it stop breaking. The blue section is definitely chewy, but I wouldn't say as chewy as taffy.
I would love to know where you got your little glass thing that you had the vanilla in and the measuring cup with the push bottom. You have some really cute little material things like that! :)
