Very similar with the traditional style of making wine in Manipur...here rice is used for fermentation process ahead of distillation and condensation process....and before drinking/taste of wine offering to Almighty God also very similar....👌👍🙏
Rice is starch. Anything with starch can be made into spirit. Sake is just how Japanese do it, but they do not distill afaik. Sake is around 20% which is unreal for baking yeast. They use some specific bacteria to make alcohol and sake is very hard to make. But anyway, rice moonshine is made in all countries that grow rice - Vietnam, South Korea (and North too I guess?), China and others
The idea of melon shine is perfect, as well as the process of preparation. Yet I think the more advanced pot still is needed. Lots of vapor off the pipe, and that vapor is lost alcohol. Final product seems to be hot, must be room temperature or even cold ideally. This still needs a real condenser, something like a snake. Would be 4 times more alcohol and way better taste-wise. Also I think it needs another 3-4 days after pulp removal. Yeast need to settle down to the bottom and then just before distilling separated from the stuff - not only improves the flavor but also no headache the morning after. These are just my recommendations for improving taste😃 Great video!

It's kind of yeast make with rice powder (maida/atta) by adding some water and mixing with the roots of the tree. The roots is main Ingredient while making a tribal wine or alcohol. I don't what it is called in English the name of the tree from where the root is use for fermentation
