The Creamy sauce you had Erik is known as Aji de Gallina (Guy-E-nah) It's very creamy, and rich. Typically you see the chicken (pollo) shredded and tossed in the sauce. Served with Rice and Salsa Crilloa (Cree-Oye-Ya) (typical Peruvian salsa consisting of thinly sliced red onion, vinegar/salt). My wife is from Peru, born/raised. She taught me everything about their cuisine & dishes. Peru also has the most known native varieties of Potato in the whole World. They love their potatoes, along with rice. It's quite typical to see the two starches served together. The best Ceviche for me is by far, Peruvian. I don't like Mexican variations compared to South America's versions of the iconic dish. I love Aji Amarillo along with Rocoto; a popular spicy salsa/condiment made of crushed peppers found across Peru, Bolivia and Argentina. It's 100x hotter than a typical Jalapeno. It's deep red color and sharp chili aroma is amazing if you like Spice. I put it on potatoes, rice, or eggs. It's almost like a Peruvian version of Sriracha, but less of a Garlic Chili tasting.

I'd absolutely love a diet break! This fear of food is so real. Its a vicious cycle. I allow myself 1 cheat day a week and then its serious restriction from there. My mind needs a diet break. Any suggestions guys? I've watched your story Erik. So incredibly inspiring.
