You said leave the APU off unless needed for electrical power which is my practice as well in the 737's, but just so their is no confusion you had the APU on at that point as evidenced by the APU Generators lights showing available?

Is there a way to switch the cabin config to the economy only cabin? I can't seem to find it, and flying RYR with a business class feels kinda off xD

Full economy cabin has not been released yet. It will be released hopefully not to far from now.

No, there isn’t (yet). But remember, Ryanair does not fly the -8, but the -8200. IFly plans to develop that one in the future.
