  • Ingredients
    ▪︎190g mixed nuts: pistachios, walnuts, almonds, and hazelnuts
    ▪︎300g plain flour
    ▪︎1tsp baking powder
    ▪︎200g caster sugar
    ▪︎2 eggs
    ▪︎3 tsp honey
    ▪︎75 g melted butter
    ▪︎pinch of salt
    ▪︎lemon zest
    ▪︎1 tsp vanilla paste
    Toast the nuts in a pan and let them cool down
    Mix the dry ingredients into a bowl
    Start adding the wet ingredients
    Mix to incorporate
    As the dough starts forming, add the nuts
    Form the dough, but don't overmix
    The dough is sticky, but don't add more flour
    Divide the dough into four pieces
    Start forming a sausage aprox. 25cm, from each piece
    Dip your hands in water when working the dough
    Place the dough pieces into a baking tray
    Bake at 180°C / 160 °C Fan/ Gas 4 /350° F 20 to 25 minutes
    Take the tray out and let them cool down for a few minutes
    Reduce the oven heat a bit
    While still warm, start cutting into small pieces and put them back on the tray
    Bake again for 10 minutes at 150 °C /300 °F
