As a professional pilot I can attest this Captain is a GOOD pilot. He actually hand flies it a fair amount. Only way you keep your basic flying skills sharp.
I’ve been watching a lot of these too, and got struck with an idea as I read your post - I am thinking they are addictive because they’re almost always calm, and I think that does something good for my insides…cheers, fellow watcher!
Glad to see a complete manual landing. A lot of clips you see that they are disconneting the A/P and A/T when already stabilized on the ILS. That is too easy. And then you see comments such as nice landing. Far from the runway before configuring the aircraft manual. That is flying. :) Nice job guys.
Thanks for the tip to watch this video for all the reasons you mentioned. These guys really knew how to fly this aircraft and showcase their handling skills.

Please clear this up, but it always seems to me that the instruments dock is like above the pilots' sight. I feel like their view is kind of limited. At what height is it with respect the pilots' head?

The moment the aircraft touches down, many passengers can be seen releasing their seat belts and reaching out for their overhead luggages. They forget that, it takes at least 15 to 20 more minutes for the exit doors to be opened. This is a common practice in Asian countries. I don't know about the passengers from other continents...
I’m in the U.S. and have not ever internationally flown…but all I know is that no matter what plane I am on in the U.S., we’re to keep our seatbelts on until we’re at the gate.

Is it common that pilots take the AP out so early?
They can fly the plane manually all the way if they want. But with certain limitations(No RVSM ect.)
For co-pilot , yes. to practice. For most captains, after everything configured, 1500ft maybe
