Moist Banana Cake
Ingredients:
3 overripe bananas
2 eggs
150g light brown sugar
180ml oil (I use rapeseed oil)
80ml milk
3 tbsp plain yoghurt
1/2 tsp salt
1 tsp vanilla extract
190g all-purpose flour
1 tsp baking powder
1 tsp baking soda
Instructions:
1. Preheat oven (170°C).
2. In a bowl, mash the bananas and set aside
3. In another bowl, beat together eggs, sugar and oil
4. Add milk, yoghurt, salt and vanilla extract.
5. Sift flour, baking powder and baking soda. Mix until no lump is visible (Do not over mixed)
6. Add mashed bananas, and mix until combined (Do not over mixed)
7. Prepare an 8-inch round pan by lining it with parchment paper and applying a layer of grease
8. Bake for 35 - 40 minutes or until the toothpick inserted comes out clean.
9. Remove the cake from the oven. Serve and enjoy it with coffee or tea.
