I no expert. But I believe the laces on the football harken back to the old days. When the ball was wrapped in leather, rubber underneath, and they stitched the leather cover up with laces. Now, it is just for appearance / tradition / better grip. Modern manufacturing can cover the ball in leather and still maintain the rubber inside, without any sewing or laces.
