Hi! I've been told that I make this more complicated that I need to, but I record the audio using a Behringer UCA222 into my MacBook Pro (as this doesn't have a line in), and the video on my iPhone 12. I then put them in iMovie, and usually have to slow the video down to sync it up to the audio. I believe you can get an audio interface that will plug directly into your iPhone, but as mine isn't USB-C there isn't much point as I'd need another adaptor, and it only takes 10 mins to sync everything together in iMovie.
