- Donne Biryani Recipe
*Ingredients:*
- 750g Jeera Rice (Chitti Muthyala Rice)
- 750g Chicken
- For the Chicken Marinade:
- 1-2 tsp Chili Powder (adjust to taste)
- Salt, to taste
- 1/2 tsp Turmeric Powder
- For the Green Chutney:
- A handful of Mint Leaves
- A handful of Coriander Leaves
- A few Fenugreek (Methi) Leaves
- 2-3 Green Chilies (adjust to taste)
- For the Masala Powder:
- 1 tsp Black Peppercorns
- 2 Bay Leaves
- 3-4 Cloves
- 1-inch Cinnamon Stick
- 1 Japatri (Mace)
- 1 Star Anise
- Additional Ingredients:
- Ghee, as required
- 2 large Onions, thinly sliced
- 2 Tomatoes, finely chopped
- 1 tbsp Ginger-Garlic Paste
- Water, double the quantity of rice
- Salt, to taste
*Instructions:*
1. *Marinate the Chicken:*
- In a bowl, mix the chicken with chili powder, salt, and turmeric. Cover and let it marinate for 1 hour.
2. *Prepare the Rice:*
- Rinse the jeera rice thoroughly and soak it in water for 1 hour.
3. *Prepare the Green Chutney:*
- In a pan, temper the mint, coriander, methi leaves, and green chilies. Allow to cool and then blend into a smooth chutney. Set aside.
4. *Prepare the Masala Powder:*
- In a grinder, combine the black peppercorns, bay leaves, cloves, cinnamon stick, japatri, and star anise. Grind to a fine powder.
5. *Cook the Biryani:*
- In a large biryani pan, heat ghee over medium flame. Add the prepared masala powder, onions, and fry until the onions turn golden brown.
- Add tomatoes and cook until soft. Mix in the ginger-garlic paste and sauté until the raw smell disappears.
- Add the marinated chicken to the pan, cooking for about 5 minutes or until it starts releasing water.
- Stir in the green chutney, mixing well.
- Pour in water (double the quantity of rice) and bring to a boil. Season with salt.
- Drain the soaked rice and add it to the pan. Stir gently to combine.
6. *Cooking the Rice:*
- Cook the mixture on a medium flame. Do not cover the pan. Cook until the rice is fully cooked and the water has evaporated, occasionally stirring gently.
7. *Serving:*
- Once the rice is tender and all the water has been absorbed, remove the pan from the heat. Let it sit for a few minutes before serving.
