  • How to recreate Black Star Pastry's famous Strawberry and Watermelon cake at home!
    Hi everyone, after seeing this cake on instagram many times, I decided to recreate this beautiful cake by Christopher Thé at home. It looks impressive but is actually pretty simple once you break down the steps! I will show you how I have recreated this cake at home using easy home cooking methods. Follow through the video to see how I've done it.

    Note: Omitted to mention in the video bake the dacquoise for 15 minutes at 180°C
    [ INGREDIENTS ]
    Almond Dacquoise:
    - 4 egg whites
    - 120 g icing sugar
    - 120 g ground almond
    - 100 g sugar
    Watermelon:
    - Slice of 1.2 cm thickness in the shape of your cake mould
    - Rosewater (enough to cover the slice)
    - Sugar (enough to cover the slice)
    Rose-scented cream:
    - 600 ml double cream
    - 60 g sugar
    - 2 tbsp rose water
    - 2 tsp (10g) gelatine
    - 1 tbsp water
    Toppings:
    - 400 g strawberries
    - 1 tbsp slivered pistachios
    - 1 tbsp dried rose petals
    Glaze:
    - 2 tbsp strawberry jam
    - 1/4 cup water

    This is a very good set of instruction and you make it look so easy. The result is a cake that looks exactly like the Black Star original
    I could probably make it the day before but leave the strawberries and pistachios off until the next day? As long as the watermelon holds up between the cream…. I wonder. Or just make the dacquiose layers at least

    There is a cafe shop around my area that sell this cake and it is a bit pricey. I have not went there since the pandemic.

      Thanks Sara! Definitely try it out. The cake layers are quite soft as they would have absorbed some of the moisture, it feels like an almond sponge rather than a biscuit :)

    For the daquoise can we replace the sugar with date paste ? Does extra moisture in the daquoise make a difference ?

      I wouldn’t freeze it, the gelatine should help stabilize the cream, but do keep it in the fridge for a bit before eating :)

      Hi, I have a convection fan oven so yes, as for the gelatine, you can skip it but from my experience it wouldn’t hold shape and turn out as pretty, taste is the same

      Next day would be fine, it won't dry out and would allow the cream to set actually :)

      Hey! You don’t *need* to have a mould, I’ve made this in a standard round cake tin with a removable base (cut it into a square shape if you’d like) - or just stack the layers then cut the edges. The mould just makes it a bit neater and easier 👌🏻

      I got them at the supermarket in the baking section, it’s quite popular in Mediterranean cooking so look in spice sections, or Middle Eastern shops too. Alternatively, amazon 😅

    Is it necessary to add gelatine? Can we add simple rose water to the cream?

      You can omit gelatine if you want. It’s used to help the cream stay firmer and have a better shape, would not impact the taste
