In this video, I will show you 2 ways to cut and cook Picanha. Picanha is a top sirloin cap that has been made famous by Brazilian steakhouses. Today I test out grilling it as a steak and also on the traditional skewers.

I agree: picanha has become my favorite cut over NY strip or even ribeye. Picanha is also really good as a roast: oil-salt-pepper all sides, sear fat cap and bottom, then slow-roast at about 300 degrees F. to 110-120 degrees F.
It's the best! I like to sear at the end, but I agree. It's best as a roast!

A future video ( or several videos) I would love for you to make is showing us where on the beef the cuts come from, pros and cons, and as you are doing here, showing us how to best cook it. Because we may not always be able to get the best or know what to do with what we can get. As some folks may not know, There is a War on Real Natural Meat!
I’ve just recently found them at Costco as they aren’t common at other stores around here. I slice them, score the fat cap and put them on a skewer, then on a hot grill over indirect heat. Turn them regularly until done the way you like. Then I sear the fat cap to caramelize it. Amazing.
Love picanha! Got it in my Butcher Box once and always included 2 in every box after that!
Picanha is a way better experience than a NY Strip. I just had two NY Strips for dinner, and I wish they were Picanhas! Also called Coulotte in some supermarkets. It's also more affordable than NY strip.

Starting the sear on the fat side is crucial for this cut. Open flame is great for bringing out the flavor, but I try not to put it directly on the fire. This allows time for the fat to render and not be chewy. Also, your method of trimming the fat is probably best because the fat simply will not render when it's too thick unless you overcook the steak. Great video!

You should put the skewer back on the grill after you cut off the crust, to create a second and sometimes more crusts.

They’re now individually available in the freezer via the suggested vacuum pkg seals. Looking fwd to more suggestions. You’ll never eat another cut of steak. It’s all I buy. I suggest adding black pepper and garlic powder when you cook them.

Picanha is huge in Brazil. I always buy it. Costco Business sells it at around $7lb. Very flavorful.
I sous vide my picanha 130 degrees internal. And then I sear the fat side. It is the most tender delicious piece of meat ever. It’s the way I take it to my friends house when I go for Thanksgiving or Christmas or whatever. They love it.❤❤
My Co used to hit Philly once a year and we would always hit Fogo de Chão while we were their. Love that cut...personally I think it is the best!

I've only had it once, but it was pre-sliced, and we cooked it up, it was delicious. Easily the best steak I've had next to a ribeye. If ribeye is the king of steak, picanha is the queen.

I dry brine mine overnight with just salt. cook it on a 2 zone system and sear it off when it gets to 117 deg. Fantastic cut of meat.

We love picanha at our house… our 5 & 7 year old granddaughters have declared that picanha is now their new favorite steak 🥩 I take them to Costco with me and they always say “Mimi, don’t forget our favorite steak!” 😂

Why is Meat in the US so dirt cheap?
It's because everyone loves to save money and buy food cheaply processed by large corporations that put tremendous downward pressure on the family ranch.
People really don't realize how they contribute to the problem buying by price alone.

I buy the ones from Costco. I cut off the fat,cube it,make a foil bowl and put it in the air fry til crispy. It’s like eating a ribeye the crispy bits with a bit of steak is fantastic!!!. I cook the steak with Redman salt only on the Flat top grill.😊
its avg price but my fav piece if cooked correct tender like a filet and add the fat of a strip
