Touhou is a very big thing in Japan has many characters, story, fanart, and ship. Alot of ship If you intrest you can start from 6th game because that is a reboot.
Touhou takes place in a land sealed from the outside world called Gensokyo, where all forgotten things, youkai and urban legends end up going, in each game the protagonists job is to solve incidents caused by them and they fight using the "spellcard rules" which is the firework show you're seeing. Moriyashrine website has all the games with translation patch I believe, plus a lot of fangames you might enjoy, you won't believe the amount of quality fangames this series has, even fan-made animes xD
Whilst certain artistic liberties were taken, all the attacks in the animation are indeed actual attacks in the game. As for being terrible at it, I wouldn’t worry too much if you’re willing to give them a go, The games have varying difficulties to choose from (from easy to lunatic to the unlockable extra stage) and as far as bullet hells go they’re pretty fair and balanced games. A positive mind set and a bit of patience will get you far.
If you are not so good in bullet hell games (like me), I would like to recommend Touhou Luna Nights for you, although it's a fan game, it's an excellent Metroidvania with time stop mechanics and a good story. It was my first Touhou game and sparked my interest on the franchise.
Fun fact about touhous storyline. most characters create incidents just because they are bored. Most of the time, no evil from any side and some just have danmaku (bullet hell) bouts for fun
