I’m not sure what it is exactly but there’s so thing so different between this type of content (including his TikTok videos) and traditional food channels that focus on recipes. He focuses on cooking as if it’s an art and teaches the building blocks of flavors and techniques. As a home cook, this is the content that will turn me into someone who blindly follows recipes to a home chef!
Agree! I made some preserved lemons 2 months ago based on another video and was wondering what to do with them now... I am making the gel! I also just used some pulp to make my hummus (ran out of lemon juice), and the taste of the hummus is absolutely special and yummy with the preserved lemon.
Sad_papi, your content on TikTok is first-rate, your pacing is perfect-not to slow, not to fast and always SUPER informative. It’s SO refreshing seeing something other than dump-and-stir. None of the well-established content creators on here showcase the skillset you do, or if they do, they aren’t really using it that much. Like, sous vide is still cutting edge here. I think you are poised to capture a part of YT that is either ready to take their cooking to the next level, or will just REALLY enjoy watching how more high-end cooking is done. I can’t wait for more content from you on here where you don’t have to worry about keeping things under a minute, or rely on multiple segments. The one thing that I will strongly suggest for you to consider is creating your videos for YT in landscape orientation. One of the major differences between TT and YT is the orientation of our phone when creating and consuming content. Content on TT is meant to be created, edited, and consumed with your camera and screen in portrait orientation. YT started before our phones could make videos, so the ENTIRE platform is set up for your video to be in landscape orientation because that was the only way video was supposed to be shot in 2005. We luckily live in a time where our phones make perfectly fine video-you don’t NEED a dedicated camcorder, DSLR, or cinema camera to make awesome and successful content here, but the VAST majority of the successful content on here is in landscape orientation. Literally everything else else is gravy, the interesting intros, the aesthetically pleasing backdrops, the Lo-Fi Hip-Hop during slow motion b-roll… Actually, you don’t even need that in order to be successful here. Look at Food Wishes and a couple of the other OG creators. Heck, Kenji Lopez-Alt wears a GoPro on his head! Your content on YT can be a means to financial independence that TT will NEVER come even close to, but it’ll take A LOT of work learning the skills required for it, but if you do put that work in, you’ll be giving Andrew Rae a run for his money in no time, no doubt..... if that’s what you’re looking to do. If I’m correct in my assumption from your TT content, you’re a professional chef working your way to the ranks of the world of haute cuisine, but like most of us, you’ve had a LOT of time on your hands since February/March, and you probably reached for the app of your generation to get your feet wet. While it is possible for professionals, especially photographers and music producers, to have thriving careers on here while still being in their chosen fields, haute cuisine is TOTALLY different in the sense that it’s not freelance work. With freelance work, having a thriving YT channel can be REALLY helpful, if not a necessity, during the time you’re waiting for your next gig. I would think that this is QUITE different for other professions like line cooks and chefs. But, much like creating a successful menu, as long as your content is on point, and your planning is good, you’ll freaking soar! One of my favorite photographers on here, Sean Tucker, gained 100,000 subs with less than a dozen videos, spaced out 2 months from each other. And the only way he was able to do that is because those videos are immaculately crafted. So yeah, Sorry for the book I’ve published in your comments section, but I hope it helps in some way.
Incredible. Your approach towards cooking & what food means is not only fresh, but a major source of inspiration for me. Would you ever consider doing videos about plating?
Great video, awesome job. I like that it's straight to the point, without being rushed so you can't follow. You also have a calming voice to listen to, so the narrated overhead shots work really well.
Love love love these long format videos! Tiktoks are good but i am really here for the step by step stuff! Maybe just do wide format since most TH-cam isn’t viewed in vertical :) keep up the good work!!!
I love how you focus on techniques and how to use common things ina very different way. I've never seen the things you do anywhere else on social media. Love the content and I really look forward to more of it.
Great video!!! Explained the how without dragging it out- excellent techniques and decent editing! Great flow of this first video- subscribed and shared!
So glad you made a TH-cam channel. My favorite thing about your TikTok is that it's more element focused rather than full recipe focused; really helps broaden the creativity.
Really good video, but try to film TH-cam videos landscape as it’s better to watch, or there’s a way to view portrait video on TH-cam, but I’m not sure how it works, might be a creator setting. But great job, love the thoroughness!!!
Great video, I can already tell these are going to be even more informative than your tiktoks (which is hard to beat!) Keep it up man, you have so much to offer this platform 🙌🏼 Also, one suggestion- would love to see these as horizontal videos 🙂
I LOVEEE your videos!!! I binge watch cooking vids on the daily and I came across you on tik tok & you’re amazing and so fun to watch!! Please never stop making videos. They are so educational too. :)
This is great. I'm a chef and have been hit with the covid restrictions bad. Unemployed for about 5 months now and was almost losing my passion to get back in to the kitchen. Watching your content has reminded me why I love what I do. Keep at it bro! Ps. If you're ever in Australia, hit me up for a feed. :)
Excellent and informative Chef! You make more advanced culinary techniques more approachable. You might consider adding some info on the origins (uses in North African cuisine) of items like preserved lemons. Looking forward to you next video!
Love how this video turned out! I like your Tik Tok for introducing new ways to use common ingredients and am excited to see some more in-depth videos on here. Just wanted to echo what others have said; the focus on individual and elevated elements that can be incorporated throughout our cooking is something we don’t see much of, so this seems like an great niche for home chefs that are comfortable in the kitchen and looking to take things to the next level. Cheers!
Really enjoy your videos. What can I do to make green bell peppers taste good? I don't like them, but I always get a bunch in my community-supported agriculture (CSA) box and I hate to be wasteful.
Aloha. A great YT start! Looks like you’ll be a great teacher in the limitless format as you are in the 1 minute format! Related to the plating request, specifically how about some eye catching garnishes?
how long do these last, and how do you store them? i loved you on TikTok, b/c you take the time and you dont cut corners. it's great to see even more of you on yt. great knife skills! good luck!
I made the green onion powder you had done and incorporated that with a brisket flat I smoked a few days ago. Both came out great, I use the onion powder in place of the store bought kind. Can you use lime in place of lemons? I figure it's the same either or but I would like to make sure first. I look forward to new vids.
Thank you for the video... Would you elaborate more on storage and shelf life for your things that you make in "bulk"? I cook everyday, but just for family of 4, 6 nights a week, and extended fam once a week during book club night.. I like the way you bring basic ingredients and show them off at a different level...
JEFF WISECARVER as long as it’s in the brine yeah there’s no issues! If you were to just dice the peel and leave it out, it would start to oxidize and deteriorate but you can pour a little of that brine over it and it’ll be fine :)
Stoked your first video is out! Can’t wait to see more. I’ve watched a lot of your vids on tiktok and I would love to know more about your background! I think you have history with fine dining but maybe you can elaborate! 🤔
I just discovered your tiktok and love that you’re on this platform now! I have a few questions... How long is an appropriate amount of time until the flavor is infused into the lemon oil? And what is the tool you use to tamp down the lemons? You’re clearly very smart so I’m sure you’ve noticed by now in the comments the recommendation to film in horizontal format, but reiterating that as well!
I love your content and the use of lemons leaving zero waste. For the video itself I would suggest turning the camera/phone the other way for a full screen video. Just my opinion but I think it would look better this way. On the use of lemons, this was amazing. I have a dish I’m working on that is a transformation on Filipino Pork Sisig. This use of lemons would be amazing in the sense that I can bring smother citrus onto the plate that is different. Could this approach be used for all/any citrus? Particularly Calamansi or limes? Thanks!!!!
would hot packing the jars ruin the lemons, or could it rush it like pickles? im not so much trying to rush the process as i would like to seal the jar :)
Yay! I'm definitely going to try making some, I really love lemons! Sorry if this is a lame question but when you store the jar, is it basically fermenting? Or is preserving different? Also would you recommend storing in a dark shelf area or in the fridge?
Love your content. I’d love some more explanation for your thought process behind some stuff. When you made the blended boiled lemon, I thought “Why did he think to add sugar and why that proportion?” Did you taste it and it was bitter? Would you also add vinegar to make the gel? Would also love to see more flavor combinations with cool techniques like in your pea ricotta TikTok! Bonus points if you keep making these cool gems and espumas and stuff
So the reason I add sugar is yes blended with the pith it can be bitter and also, pectin requires sugar and acid to thicken and lemons have a lot of acid already so by adding a touch of sugar you get your gel! Think like jams, jelly, and marmalade that’s all pectin!
i have been boiling my lids for my whole life and so has my mother and grandmothers. how does it seal closed on the jar if it's not heated? all my old recipes say to process jars and lids ten minutes.
It is important NOT to boil the metal canning lids or their rings. The extreme heat of boiling water can harm the rubber sealing rings on the lids, which can result in a broken seal and contamination of the jar's contents.
That was pulled directly from the manufacture website. I do know at some point the rubber compound on the lids changed so it’s not necessary. But do your own research
This is what caught my eye. Technique!
yes, he gives you the why behind the 'how to'. I would have rinsed my lemons lightly if he didn't talk about the wax that the grocery store puts on it
Congrats on your first youtube video bro! This is the beginning of your massive success on here.
Thank you so much man 🙏🙏🙏 the support means so much
Couldn’t agree more. Love the TikTok vids. This long form will be next level. Thanks for sharing all this with us.
I've just watched six different videos on preserving lemons and this was by far the most useful. Thanks.
Agree! I made some preserved lemons 2 months ago based on another video and was wondering what to do with them now... I am making the gel! I also just used some pulp to make my hummus (ran out of lemon juice), and the taste of the hummus is absolutely special and yummy with the preserved lemon.

Love the zero waste! Always look forward to your TikToks 🤠
Something new for me to be more creative with lemons. Thank you.
This was a fantastic start to your TH-cam channel. You have such a talent for anticipating questions and not skipping steps.
Incredible. Your approach towards cooking & what food means is not only fresh, but a major source of inspiration for me.
Would you ever consider doing videos about plating?
notkyleschultz will definitely be doing some plating videos
Great video, awesome job. I like that it's straight to the point, without being rushed so you can't follow. You also have a calming voice to listen to, so the narrated overhead shots work really well.

Im glad I have a new cooking channel to keep up with!
I love how you focus on techniques and how to use common things ina very different way. I've never seen the things you do anywhere else on social media. Love the content and I really look forward to more of it.

Such a good video! You’re slowly getting me back into my kitchen, I’ve been in a culinary rut now I’m excited to try all your tips out!❤️

Can’t wait to try this! Thank you
Great Job . I’m doing this but mix salt & sugar . 😳 I can’t wait to try this

You can totally do limes, I’ve done oranges as well!
@@sad_papi2354 Awesome! If you want I have a few vids up on Tic Tac @mr_kringle. Videos are meh but the brisket and St. Louis ribs are hittin.
Welcome to the tube
Ahhh I love this I can’t wait to try it out!!! Notifications turned on too btw🤠
Thank you for the video... Would you elaborate more on storage and shelf life for your things that you make in "bulk"? I cook everyday, but just for family of 4, 6 nights a week, and extended fam once a week during book club night.. I like the way you bring basic ingredients and show them off at a different level...
Thanks man! I put the shelf life in the description, lasts for 6 months!
@sad_papi thanks! Would that be for all of those iterations? I'm assuming keep in the fridge once opened?
JEFF WISECARVER as long as it’s in the brine yeah there’s no issues! If you were to just dice the peel and leave it out, it would start to oxidize and deteriorate but you can pour a little of that brine over it and it’ll be fine :)
JEFF WISECARVER and yes in the fridge lol
Looove the video! I eat a lot of lemons, but never like this so definitely going to try it out! And also subscribed to your channel! 🙌🏼
Any specific tips for making these in a vacuum bag? Thank you, man! Love your content
Awesome! How long will the lemon oil keep?
Man, I really aspire to cook like this one day
Stoked your first video is out! Can’t wait to see more. I’ve watched a lot of your vids on tiktok and I would love to know more about your background! I think you have history with fine dining but maybe you can elaborate! 🤔

I would love to try this. Do you rinse the lemons off after they are preserved and before you use them?
I love your content and the use of lemons leaving zero waste.
For the video itself I would suggest turning the camera/phone the other way for a full screen video. Just my opinion but I think it would look better this way.

So the salt and acid act as a cold cook and leave it out for 3 or 4 weeks until they’re ready then store in the fridge!
Love your content. I’d love some more explanation for your thought process behind some stuff. When you made the blended boiled lemon, I thought “Why did he think to add sugar and why that proportion?” Did you taste it and it was bitter? Would you also add vinegar to make the gel?

sad_papi ooh I did now know that about pectin needing sugar and acid! Thanks for the info!!!
Can I do this with limes?
This was great. Happy to see you’ve ventured onto TH-cam. Have you worked with finger limes before?
Yeah I love finger limes! I would pack the outside with salt and ferment them they’re super delicious fermented
How long does each part of the ingredient last or store?
this is great! thank you 💕 i bet those smell in-cred-ible omfg
It’s Paul! Sup sad_papi! This was a great tutorial!
Choppin skills!
Could I put this on a dessert or is it to salty

Doesn’t the glass shatter
When spreading the lemon and adding salt, does the type of salt matter or not really?
Kosher salt :)
@@sad_papi2354 wow! So fast ! Ty ! I’m making it rn
