I can't get good coconuts locally. Can I use the dry, shredded coconut from my local Indian supermarket? How would I prepare it so that it is soft like your fresh grated coconut? Do I soak the dry coconut in some coconut milk?
You can use the pre shredded coconut but I'd suggest you add alittle milk to it and blend it alittle in the food processor it will become fine and moist like the freshly grated coconut.

Cook the coconut mix it makes it extra juicy
It's juicy regardless, the melting of the sugar causes it to be juicy and runny whether you do it on the stove top or in the oven doesn't matter.

Made it but it smelled a bit too yeasty, so will try again with less yeast. I don't get the brand you have here where I live.
What size cup u use to measure your flour
Standard size measuring cups. The seperated stainless steel ones.
