Bro no matter how good i do I can’t trigger the what if , I’ve literally done the fight full health and all I hear is gohan saying “ im not tapping into my full power “ and I’m like bro freeza is getting cooked rn how am I not beating this

First, are you in normal difficulty? Double check, bc alternate endings don’t trigger in easy mode.
Second, it’s not only about how fast you defeat him, but about how much health you loose. You need to keep your hp loss at a minimum, and when I say minimum I mean that if you get hit with more than one combo, just restart. And also do it as fast as possible. Take no more than one minute to defeat Frieza Soldier; and two tops to beat Frieza.

You can transform in normal battle because Mystic Gohan is another character and you cant use normal Adult Gohan to transform to Mystic
However, Mystic Gohan does have the tracksuit skin

You have to put up a good fight against Frieza. That’s the requirement. I think you have to get him down to yellow and red bars while keeping your own health up.
