Your videos helped me realize that vegan cooking isn't as intimidating as I thought and I love when you don't have an ingredient, you just say "oh well" and find something else or just don't put it in! The realism we need.
I would definitely watch a kitchen supply spa day. I’d also love to see a kitchen “tour” of all your favorite things to use when you cook. Next time u make them, mix the enchilada sauce with a can of Rotel diced tomatoes, and it will be even better and more authentic. The sauce is usually more of like a chunky enchilada sauce. I’ve been vegan for 12 years. But WAYYYY back in the day, I think 1999, I worked at Taco Bell. The Mexican pizza was my absolute hands down favorite thing. I will say, they did NOT use enchilada sauce on the pizza. Their enchilada sauce or “red sauce”, lol, was on the bean burrito and the tostada. The sauce they had for the pizza was very different and ONLY used on the pizza. I can’t describe it other than a southwestern pizza sauce. It wasn’t smooth like enchilada sauce, it had chunks of tomatoes in it. They also cooked it in a steamer. I don’t know how anyone would emulate that at home, just saying the pizza wasn’t baked it was steamed.

I went vegan in 2002! Tofurky deli slices were literally GRAY in color. And the vegan cheese slices would straight up ruin a sandwich or wrap. 🤣
