What you cut up we here in South Carolina call fat back. It is something we fry out till it is very crispy golden brown. ( we cut it thin) in the frying pan that we fried it in we add flour salt and black pepper let it cook up all the grease. Then we add milk to fill up the pan to the half way point cook stiring constantly till thick. We call that thickining gravy. We eat it with biscuits. Biscuits are made with 2 cups of flour, 3/4 cup of lard mix that together then add milk till dough pulls together into a sticky ball. Sprinkle down flour dump dough pat out with a little flour on your hands till dought is 1 and 1/2 inches thick. Cuse a clean lid the size of no bigger than 3 inches to cut the biscuits out. Do not twist. Cut straight down. Grease a pan place biscuits in it over low 🔥 with lid, biscuits will rise. Once the get a little crispy on top but not brown turn the biscuits over in the pan and finish cooking about 5 minutes. You will love this meal with mellon tomatoes and all kinds of things that meat you cooked to start this with is great broken up over the gravy biscuits❤
