The human eye can see upwards of 500+hz, the average person sees 60-90hz. The average person can perceive 30-60fps. It’s part of why 120fps is the sweet spot as it’s double the max frame rate of the human eye to allow for better stability.

However, recent research has indicated this isn't true for professional gamers as their eye processing speed is better than most people. This is also why professional gamers fall off as they age because eye processing speed decreases as you age
