If you export the saved track from your chart plotter, it can be done with Telemetry Overlay using custom gauges. I haven’t bothered to do it yet but it’s on my list for this year. So I just use speed, heading, heel angle etc for now which I get off the GoPro360 max.

Id also love to know how they at least gather the data. Looking to try and do something similar
I wrote my own software to cpature the intrument data and then overlay it on top of the video.
