I really appreciate your _why we do this_ aspect. Being very thorough is not a typical quality in a lot of videos for gardening or food prep. Especially appreciated the 'don't eat green potatoes' information; I never knew this before I began growing my own and would frequently get green potatoes in the bag from the store. [Another reason that solidified growing my own.]

If you lay a wooden spoon across the top of your boiling water pot as the water bubbles and hits the spoon it pops the bubbles and it prevents the water from boiling over and making a mess.
I use the Townecraft vegetable cutter. Unfortunately, they don't make them anymore. You might be able to find one on ebay or somewhere like that. We did find a similar one on Amazon, and it is linked in the description box of this video. :)
I have a question please. Aren't the shredded potatoes cooking in the hot water? I know its not boiling but, its close to it and those potatoes are small shreds. You're not worried about all the time it takes to bring them back up to a boil is cooking them?
Yes, it will. That said, we didn’t love the texture of the sweet potato rehydrated. You might though! I recommend testing a small batch, rehydrating, and tasting before processing all 100 lbs this way. 🙂
i have a neighbor who asked if i wanted to 'go halfers' on the end of year sales of veggies - i'm probably the only vegetarian for 100 miles but 75 pounds of potatoes just for ME?? yikes! so i will dehydrating cubes, shreds, slices and instant for the next week.

It's possible, but I've also never had a problem with the finished product. They rehydrate and cook up beautifully.

Yes, potatoes in all preserved forms do best when blanched first. 🙂

Doesn't Ascorbic Acid do the same thing, prevent the potatoes from turning brown? Works for apples.
